The chickpeas need to be washed and soaked in plenty of water for 10-12 hours (preferably overnight). Drain the water, add clean cold water to the chickpeas in a volume of 1:5 and cook for 10 minutes over medium heat, then over low heat until cooked for 1-1.5 hours (depending on the chickpeas). It is better to add salt at the end of cooking. Pour the broth into a separate bowl and cool the chickpeas. If desired, the swollen chickpeas can be peeled, then the hummus will be homogeneous and more tender.
STEP 3

Prepare the tahini paste: dry the sesame seeds in a dry frying pan, stirring constantly, making sure they don’t burn, just a light golden color. Pour into a blender, add olive oil and grind until smooth.
STEP 4

Let's move on to the most important thing: pour chickpeas into a blender, add garlic, lemon juice, soy sauce, salt, pepper, tahini. Mix everything, adding broth to the desired thickness. We divide the finished pate into 4 parts and proceed to coloring.
STEP 5

For the green color: in a blender, mix 1 part of the pate and parsley leaves. Add salt if necessary.
STEP 6

For the red color: in a blender, mix 1 more part of the pate, chopped red bell pepper and smoked paprika. Let's try. We adjust the taste.
STEP 7

For the yellow color: in a blender, mix 1 more part of the pate and turmeric. Leave the last part of the pate in its original color.
STEP 8

We put our beauty and deliciousness into prepared jars in layers, compacting them a little so that there is no emptiness.
STEP 9

I got 4 jars of 200 ml each. Place in the refrigerator for several hours. Hummus can be not only an independent snack, but also one of the ingredients in your dishes. Bon appetit!
