Drain the water, add clean cold water to the chickpeas in a volume of 1:5 and cook for 10 minutes over medium heat, then over low heat until cooked for 1-1.5 hours (depending on the chickpeas). It is better to add salt at the end of cooking. Pour the broth into a separate bowl and cool the chickpeas. If desired, the swollen chickpeas can be peeled, then the hummus will be homogeneous and more tender.

    Prepare the tahini paste: dry the sesame seeds in a dry frying pan, stirring constantly, making sure they don’t burn, just a light golden color. Pour into a blender, add olive oil and grind until smooth.

    Let's move on to the most important thing: pour chickpeas into a blender, add garlic, lemon juice, soy sauce, salt, pepper, tahini. Mix everything, adding broth to the desired thickness. We divide the finished pate into 4 parts and proceed to coloring.

    For the green color: in a blender, mix 1 part of the pate and parsley leaves. Add salt if necessary.

    For the red color: in a blender, mix 1 more part of the pate, chopped red bell pepper and smoked paprika. Let's try. We adjust the taste.
