I had never washed shrimp before, so I immediately threw it into boiling water. But if you rinse them, you get less debris, less foam, and cook much faster. I cooked it in this wonderful brine with lemon juice and bay leaves. The water turned out to be salty, but the shrimp absorbed exactly the right amount of salt. After boiling, I immediately set the timer for 5 minutes. The shrimp turned out incredibly tasty! Elastic, but soft, not “rubbery” at all. Great recipe! Thank you!
