STEP 1
How to make homemade noodles with vegetables? Prepare all the necessary ingredients. A set of vegetables can be selected according to taste and availability. You can also use not only fresh, but also frozen vegetables.
STEP 2
How to make homemade noodles? Pour the sifted wheat flour into a deep bowl. If desired and to taste, you can add a little buckwheat flour to the wheat flour, and you will get buckwheat noodles, and the dish will become even healthier. Make a small depression in the center of the flour mound. You may need a little less or more flour, check the consistency. STEP 3
Beat a chicken egg into the flour, pour in a couple of tablespoons of vegetable oil and a glass of clean drinking water, add half a teaspoon of table salt. Mix the ingredients with a spatula or spoon.
STEP 4
When the mixture becomes thick and more uniform in consistency, place it on a floured work surface. And adding wheat flour in small batches, continue kneading the dough. It should turn out smooth and elastic. Wrap the dough in cling film and put it in the refrigerator for half an hour. While the dough is resting, prepare the vegetables.
STEP 5
Peel the onions and cut into cubes.

Wash the carrots in running water with a brush, peel and cut into cubes.
STEP 7
Wash the zucchini or young zucchini and cut into small cubes.
STEP 8
Wash the eggplants, cut into cubes or strips, place in a bowl, sprinkle with salt and leave for 20 minutes. After the specified time, rinse the eggplants from salt with water, let the water drain completely. We do this in order to remove the bitterness from eggplants. Keep in mind that currently there are varieties of eggplants that do not contain bitterness.
STEP 9
Wash the tomatoes in running water, remove the stem attachment and cut into cubes.
STEP 10
It is better to use bell peppers of different colors to make the dish brighter and more colorful. Wash the bell pepper, remove the seed pod and stalk. Cut the pepper pulp into strips or cubes.
STEP 11
Remove the finished dough from the refrigerator. Roll out on a floured surface into a thin layer, cut into narrow strips.
STEP 12
Let the noodles dry a little at room temperature and boil in salted water until half cooked, cook for about 10 minutes from the moment the water boils. Drain the noodles in a colander.
STEP 13
Pour olive oil into a frying pan and heat it. Fry onions in oil until transparent. Place the remaining cooked vegetables in the pan. Stir and fry over medium heat for about 10 minutes.
STEP 14
Wash fresh herbs, dry with a paper towel and finely chop with a knife.
STEP 15
Place homemade noodles in a frying pan with vegetables. Add salt and ground black pepper to taste, stir. Pour a small amount of the broth in which the noodles were cooked into the pan. Simmer the noodles with vegetables under the lid for about 10 minutes. Add finely chopped fresh parsley, dill and green onions. Stir. Turn off the fire. The dish is ready.
