STEP 1
How to make grated pie with cottage cheese? Prepare your food. First to prepare the dough. Take the best quality butter that complies with GOST. Remove it from the refrigerator in advance to soften it. The fat content of the cream can be any.
STEP 2
Prepare the dough. How to make the dough? Take a large bowl and sift the flour into it. This will not only remove debris, but also saturate the flour with oxygen, which will make the dough fluffier and airier.
STEP 3
Add baking powder to the flour and mix it well. Beat in the eggs, after washing and drying them with napkins. Add butter, sugar, pour in cream.
STEP 4
Knead the dough, first with a spoon and then with your hands. Kneading it is not at all difficult; the dough will quickly stop being sticky and come together into a ball.
STEP 5
Divide the dough into two parts, wrap them in film or put them in bags. Place the dough in the freezer for 30 minutes. It should harden and then it will be much easier to grate it.
STEP 6
While the dough is chilling, make the filling. Prepare food for her. Cottage cheese is suitable for any fat content, the main thing is that it is of high quality, without milk fat substitutes. Also use any cream.
STEP 7
How to make the filling? Place cottage cheese, cream and sugar in a bowl. If you wish, you can add vanilla in any form to the filling.
STEP 8
Beat the cottage cheese with sugar and cream with an immersion blender until smooth and paste-like. If you don't have a blender, press the cottage cheese through a sieve before adding sugar and cream. In any case, the filling made from pureed cottage cheese is much softer and tastier, so don’t skip this step.
STEP 9
Take a baking dish. It can be of any shape and from any material. I have a round, detachable one with a diameter of 20 cm. Line the mold with baking paper. I only covered the bottom since I have a non-stick coating. With paper it will be easier to remove the pie. Remove one portion of dough from the freezer. Grate the dough directly into the pan using a coarse grater. It will be more convenient to do this by holding the dough in the bag with your hand.
STEP 10
Spread the grated dough evenly over the bottom of the pan. Don't pack it too hard. Grated pie is good precisely because its dough looks like coarse crumbs.
STEP 11
Place the curd mixture on the dough layer and smooth it out with a spoon. You can put any additives on top of the cottage cheese - raisins, chopped chocolate, berries, jam.
STEP 12
Take out the second part of the dough and grate it in the same way. This time it is better to rub it on a board. Transfer the grated dough onto the cottage cheese, forming the top layer.
STEP 13
Bake the pie in an oven preheated to 180°C (I have an electric oven, top-bottom mode) for 30-40 minutes. The top should be browned. Remove the finished pie from the oven and cool completely. Then remove from the mold and cut into portions.
STEP 14
Serve the pie with tea or coffee; you can additionally decorate it with berries and mint leaves. Bon appetit!
