Gluten-free rice flour dumplings

Healthy, dietary, low-calorie, for dinner! Dumplings made from rice flour are practically no different in taste from traditional ones made from wheat flour. But their calorie content is much lower. Plus they are gluten free. Turkey or chicken is used as filling, which also reduces calorie content.

  1. STEP 1

    STEP 1

How to make dumplings from rice flour? Prepare your food. Dough made from rice flour alone is quite difficult to form, so it is better to replace a small part with wheat flour. Instead of turkey, chicken fillet is also suitable. It is better if the meat is chilled rather than frozen - then the filling will be juicier.

  2. STEP 2

    STEP 2

First of all, prepare the dough. How to make the dough? Take a bowl and sift the flour into it - this is necessary to thoroughly loosen the rice flour, as it is heavier than wheat flour. Add salt to flour, stir.

  3. STEP 3

    STEP 3

Make a well in the center and crack the egg into it. Start adding water while stirring the flour with a fork. You may need a little more or less water. Pour in most of it and start kneading the dough with your hands.

  4. STEP 4

    STEP 4

Then look at the consistency of the dough - if it is still dry, add water. If it molds well and gathers into a ball, there is enough water. The finished dough made from rice flour differs from wheat flour - it is not as elastic, since rice does not contain gluten. Therefore, it is better if the dough is softer than traditional wheat dough.

  5. STEP 5

    STEP 5

Prepare the filling. How to make the filling? Grind the meat to mince in any convenient way - through a meat grinder or in a food processor.

  6. STEP 6

    STEP 6

Peel the onion and grate it on a fine grater - the filling will be more tender. Add pepper and salt to taste.

  7. STEP 7

    STEP 7

Mix the filling well. You can also pour a little water into it - it will turn out juicier.

  8. STEP 8

    STEP 8

Roll out the dough on the table into a thin layer. Dust the surface and rolling pin well with flour - the dough is soft and may stick. Cut circles out of it using a suitable notch - for me it’s a glass.

  9. STEP 9

    STEP 9

Use a spoon to place some meat in the center of each circle. Fold it into a pie, carefully molding the edges. Wrap the dumpling in a bagel and secure the corners. Rice flour dough breaks easily, but is also easy to put back together. Therefore, if any holes appear, carefully close them with your fingers. Make dumplings from all the dough this way. I got about 40 pieces.

  10. STEP 10

    STEP 10

Boil the dumplings in salted water, after boiling for about 8 minutes - the dumplings should float. Use a slotted spoon to catch the finished dumplings onto a plate. Serve with any sauce - sour cream, mayonnaise, ketchup. Bon appetit!

Gluten-free rice flour dumplings are an option suitable for people with gluten allergies or those who are careful about their health. Or for people like me who like to try something new and different. The experiment was a success! Original dough, delicious filling, which, by the way, can be traditional, made from beef and pork. Overall, we really enjoyed it!
