Fried smelt

Would you like to have a tasty crunch with fried fish? Smelt is the best choice! Smelt season has begun! The entire culinary capital has moved to St. Petersburg! I realized immediately that smelt is the national specialty of St. Petersburg as soon as I saw mountains of this fragrant fish at every step at the end of April. I offer you an incredibly simple recipe for this fish, but I’ll write the secret later.

Oh, what a delicious fish! I’ve never tried smelt before, I haven’t seen anything on our shelves. Shura, are there a lot of seeds in it, or are they very delicate and not particularly noticeable??

It is very tasty and is sold only in the period April - May, there are bones, as in all fish, but they are very easy to separate and are not rough, thin and soft. It also contains a lot of caviar. The taste is inimitable, it is completely different from any other fish, but the price matches the red one)))

Amazingly delicious fish!!! On Sakhalin it’s like dirt; our friends pass it on to us salty. But I haven’t seen it on sale here, I would love to fry it according to Shurochka’s recipe!!!
