    How to fry herring in a frying pan? Prepare the food. Cut off the head, fins and tail of the fish, remove the insides and carefully remove the black film inside the herring so that it does not give off bitterness. I took fresh frozen herring and cut it up while still frozen. But just before frying, it must have completely thawed, otherwise the meat will fall off the bones.     Remove the scales, rinse the fish under running water and cut into medium-sized pieces. I got three pieces. At this stage, you can sprinkle the fish with freshly squeezed lemon juice. I didn't have any lemon, so I skipped this step. In general, any sea fish goes well with lemon juice.

    Mix flour with salt to taste. I added three pinches.

    Salt each piece inside and roll in flour on all sides. There is no need to salt the outside of the fish, since the salt is already in the flour.

    Heat the oil well in a frying pan - in poorly heated oil the fish will fall apart. The potatoes will absorb the fishy smell. This is a method I have personally tested. Fry the herring over medium heat for 5-7 minutes until a stable golden brown crust forms.

    Remove the potatoes and turn the fish over to the other side. Reduce heat, cover the pan with a lid and simmer the fish for about 10 minutes. During this time, the herring will have time to cook well, become soft and juicy. Remove the fish from the pan and serve. Bon appetit!
