STEP 1

Prepare the ingredients.
STEP 2

Wash the mushrooms and cut into pieces. Small mushrooms can be left whole.
STEP 3

Peel the potatoes and cut into cubes.
STEP 4

Pour cold water over the mushrooms and the whole onion and bring to a boil. Cook, skimming off the foam, until the chanterelles settle to the bottom. How to choose a pan, read the separate article at the end of this recipe.
STEP 5

Place potatoes over chanterelles. Cook until the potatoes are ready.
STEP 6

Season the soup with butter and let it brew under the lid for 7-10 minutes. Wash the dill, dry and chop. Pour the soup into bowls. Serve with dill and sour cream.

I had chanterelles at my disposal. I looked on the website to see what I could cook from them for lunch. I liked the recipe for fresh chanterelle soup. The soup is prepared very simply and quite quickly. After the water boiled, the chanterelles were cooked over slightly below average heat for about 20 minutes, with potatoes for another 15 minutes. I tried the broth before and after adding butter. With the oil, the taste became richer and brighter; I didn’t even expect that the difference would be so big. Both adults and children liked the soup. From a minimal amount of ingredients we got a very tasty and aromatic first course. Maria, thank you very much for the recipe!
