I had chanterelles at my disposal. I looked on the website to see what I could cook from them for lunch. I liked the recipe for fresh chanterelle soup. The soup is prepared very simply and quite quickly. After the water boiled, the chanterelles were cooked over slightly below average heat for about 20 minutes, with potatoes for another 15 minutes. I tried the broth before and after adding butter. With the oil, the taste became richer and brighter; I didn’t even expect that the difference would be so big. Both adults and children liked the soup. From a minimal amount of ingredients we got a very tasty and aromatic first course. Maria, thank you very much for the recipe!
