How to make a simple salad from fresh cabbage and cucumbers? To begin, prepare all the necessary ingredients according to the list. It is better to make a salad from young cabbage - it is soft and juicy. I have one long cucumber, if you have small vegetables, take several pieces. You can make your own mayonnaise. Below the steps you will find a link to a catalog of homemade mayonnaise recipes.

  2. STEP 2

    STEP 2

Wash the head of young white cabbage, remove the spoiled leaves and chop finely, avoiding the hard areas around the stalk. Place the cabbage in a large bowl and knead it thoroughly with your hands so that the cabbage releases the juice.

  3. STEP 3

    STEP 3

Wash the cucumber, dry and cut into strips. The skin, if it is not rough, damaged or bitter, does not need to be cut off.

  4. STEP 4

    STEP 4

Hard boil the eggs, cool by pouring cold water over the eggs. Then peel off the shell. Separate the yolks from the whites. Cut the whites into strips. You will learn how to boil eggs and a lot of other useful information by reading a separate article. There is a link at the end of this recipe.

  5. STEP 5

    STEP 5

Place the yolks in a bowl with mayonnaise and mash with a fork. You can use any mayonnaise you like. I have olive. Homemade mayonnaise will also work.

  6. STEP 6

    STEP 6

Wash the dill, dry it and chop it finely. In addition to dill, you can use other herbs to taste, for example, parsley, cilantro, green onions, etc.

  7. STEP 7

    STEP 7

Place chopped whites, cucumbers, dill and yolks with mayonnaise in a bowl with cabbage.

  8. STEP 8

Add salt to everything and mix thoroughly. The salad can be served immediately. Bon appetit!

Summer fresh salads are always tasty and light. I liked the fresh cabbage and cucumber salad. I used vegetables and herbs from the garden, homemade eggs, and bought mayonnaise with 67% fat content. Among the spices I also added ground black pepper and suneli hops. I added dill and green onions to the salad. Grind all the ingredients. I didn’t crush the cabbage with my hands; we like it better when it’s crunchy. I didn’t separate the yolks from the whites, so to speak I didn’t complicate the process) I just cut them into cubes. I mixed everything and served it immediately. Great recipe! The salad turned out to be light, fresh, crispy, filling and quick to prepare. An excellent side dish for meat cutlets. I made a salad of fresh cabbage and cucumbers. Of course, winter varieties of cabbage are not as tender as summer ones, so I tried to cut the cabbage smaller and rubbed it with my hands for greater softness and juiciness. I added fresh cucumber, fragrant dill, and now the kitchen was filled with the aroma of summer salad))). Adding boiled egg yolks to mayonnaise makes it more stable, the salad does not “flow” longer, which is especially important when the salad contains juicy fresh vegetables. Thanks for the recipe, Maria!

A fresh vegetable salad is a good addition to lunch or dinner. I really liked this recipe. It has an excellent combination of young cabbage and fresh cucumbers. I especially liked the dressing! I didn’t have mayonnaise, so I took the same amount of sour cream and 0.5 tsp. lemon juice. It turned out to be a worthy replacement. And after adding the yolks, the dressing acquired a very pleasant consistency, creamy color and such a delicate taste that I wanted to eat it just like that. In addition to dill, I took celery leaves and arugula from the greens. This wonderful salad has just the right amount of everything. I recommend it for cooking!
