How to make kefir flatbreads with cheese and herbs in a frying pan? Prepare the necessary ingredients for the dough. Remove the kefir from the refrigerator in advance so that it is not cold, but at approximately room temperature.

In a bowl, beat the egg and salt until smooth.
STEP 4

Pour in kefir and soda, stir.
STEP 5

Add vegetable oil, it will give the dough elasticity.
STEP 6

Add about 3/4 of the sifted flour and mix the dough with a spoon. Do not add all the flour at once; you may need less. The dough should not be too hard.
STEP 7

Knead a soft, tender, homogeneous dough. Wrap it in cling film and leave it on the counter for 20-30 minutes.

Prepare the filling. For it, you can take any types of hard or soft cheese (Suluguni, Adyghe, feta cheese). The main thing is that the cheese is tasty, of high quality, without adding dairy fats. You can adjust the proportions of cheese to your taste.

Grate the cheese on a coarse grater.
STEP 10

Wash the parsley and dill and dry well. Finely chop the greens.

Combine grated cheese and herbs, mix well.

The dough “rested”, became more pliable, elastic and pleasant to work with. Divide the dough into equal parts. I divided it into 7 parts. If you want larger cakes, divide the dough into 5-6 parts.

Also divide the filling into portions according to the number of cakes.

Roll each piece of dough into a round cake.

Place the filling in the middle of the flatbread.

Lift the edges of the dough over the filling and press together well.

Press the dough with the filling a little with your palm and roll it out carefully so that the dough does not tear.

Fry the flatbread in a dry, heated frying pan until golden brown. The flatbread is fried quickly, about 2 minutes on one side. I fried it over medium heat. Turn the flatbread over to the other side and fry until golden brown. During frying, the flatbread may swell from the steam accumulated inside. After cooling it will settle. While one tortilla is frying, form the next one. The cooking process will be continuous and the pan will heat evenly. Fry all the tortillas in this manner.
STEP 20

Immediately after cooking, brush the top of the flatbread with butter.
STEP 21

Place the finished flatbreads with cheese and herbs on top of each other so that they remain warm longer and serve immediately. Bon appetit!
