    Wash the fish fillet, salt and pepper.

    Slice the potatoes VERY thinly. I use a Burner grater. Dip the fish into the beaten egg.

    Place potato slices in scales on one side of the fish fillet.

    Very carefully place our fish, scales side down, in a frying pan heated with oil. If the “scales” spread out, we will also carefully push them back with a wooden spatula.

    On top, directly in the frying pan, place a layer of “scales” on the other side of the fillet. I brush the potatoes with the remaining beaten egg by hand so that they don’t fall apart so much when turning them over.

    The first side of our fish is fried, take a large spatula and carefully turn the fish over. Fry until golden brown. Ready!
