I have a perch, but you can choose other fish of suitable sizes.

    Cut the fish lengthwise, but not all the way through, and unwrap it. Season the fish with salt, pepper, sprinkle with spices inside and outside and refrigerate for 15 minutes.

    Peel the vegetables. Cut the tomato and onion into slices. I don't peel the tomatoes so they don't lose their shape during baking.

    Peel the garlic and cut into slices. Finely chop the greens.

I found a wonderful recipe on the website for fish in foil baked with vegetables in the oven. I had two carcasses of sea bass, about 250 g each. I cleaned them and cut off all the fins, because they are very sharp. I cut the fish, making a kind of little book. Sprinkle fish seasoning inside and outside and sprinkle with lemon juice. I added a small young zucchini to the vegetables, cutting it into circles. I placed the perches on a bed of onions and placed potatoes, zucchini and garlic around them. The vegetables were simply salted without spices. I placed the tomatoes on top and inserted them into the belly along with a sprig of parsley. I baked all this beauty for 45 minutes under foil, then 5 minutes under the grill without it. This dish can be served directly in a foil “plate”. The portion turned out to be large and filling. Both the sea bass and the vegetable side dish taste simply great, especially with a glass of white wine!
