Eggplant in the oven with bell pepper, turmeric and spices

STEP 1

Take 2 medium eggplants and 4 bell peppers, onion, garlic and spices. We need parsley for serving

We cut the eggplants. I prefer circles, but cut them into smaller cubes. Then the cooking time will decrease.

Pour cold salted water over the eggplants and leave for about 30 minutes until the bitterness comes out.

Meanwhile, clean and chop the pepper. It can be in rings, or in smaller pieces.

Peel the onion and finely chop it.

Peel the garlic cloves, crush them with a knife and chop them.
STEP 7

Place the vegetables in a ceramic baking dish. Place in the oven to bake; there is no need to cover the pan. Finely chopped vegetables are baked for about an hour, I needed more time, about 1.5 hours. During this time, it is necessary to stir the vegetables several times.
STEP 8

Before removing from the oven, pour the eggplants with aromatic spices. To do this, first of all, remove the seeds and chop the hot pepper. I have a dry pod, but if you have a fresh one, you can use it

Heat oil in a small frying pan and add turmeric and pepper. Heat the spices for a few minutes to allow the spices to release their aroma.
STEP 10

Pour this oil over the eggplants and peppers and place in the oven for another 5-10 minutes.
STEP 11

Remove the finished eggplants and let them cool slightly.
STEP 12

A delicious aromatic snack is ready. You can eat it as an independent dish, and it will also go well with meat or fish.
