To prepare delicious vegetable caviar with eggplants for the winter, we prepare the necessary products.
STEP 2

Place the grated carrots in a frying pan heated with vegetable oil added to taste and fry, stirring occasionally.
STEP 3

Place the onion, cut into half rings, into a frying pan heated with vegetable oil added to taste and fry until golden, stirring occasionally.
STEP 4

We cut the skin from three kilograms of eggplants and cut them into arbitrary strips.
STEP 5

Place the sliced eggplants in an even layer on a baking sheet.
STEP 6

Pour vegetable oil on top of the eggplants to taste, then add salt and stir, place the baking sheet in an oven preheated to two hundred degrees.

Finely chop six hundred grams of parsley and place it in a large enamel bowl.
STEP 8

Remove the baking sheet with baked eggplants from the oven after nine minutes.
STEP 9

Place the eggplants in a bowl with chopped parsley.

Place another portion of chopped eggplants on a baking sheet, then add vegetable oil and salt to taste, mix and place in the oven.

Place the fried carrots from the frying pan into a bowl with eggplants and parsley.

Place the onion fried until golden brown from the frying pan into a common bowl.

Place the second batch of chopped onions and grated carrots in frying pans heated on the stove, add vegetable oil and stir-fry until golden, then place in a common bowl with the second batch of baked eggplants.

Cut one kilogram of tomatoes into random slices, after soaking them in hot water and removing the skin.

Place the bowl with the vegetable mixture on the stove and, stirring, bring the vegetable mixture to a boil.

Pour salt and two tablespoons of sugar into a bowl with the vegetable mixture to taste and, after mixing all the ingredients well, continue to cook the vegetable caviar, stirring occasionally for five to seven minutes.

Pour boiling water over the lids needed to close the jars in a bowl.

Fill sterile jars tightly with prepared caviar and cover them with lids.

Place a large pan of hot water on the stove, the bottom of which is covered with a kitchen napkin.

We put the jars of caviar in a saucepan, the water should reach the shoulders of the jars and after it boils, we sterilize the jars with caviar for fifteen to twenty minutes.
