    How to make a dozen salad for the winter from eggplants? Everything is very simple, you don’t even need a scale, since you will need exactly ten pieces of all the ingredients. This time I will cook half the norm, that is, five.

    So, take ten pieces each of eggplant, bell pepper, onion, and tomato. Peel the onions and cut off the stems of the eggplants. Cut the pepper in half and remove the core and seeds. Peel ten cloves of garlic. Wash everything well and dry.

    Take a large saucepan with a thick bottom and pour 200 ml (a glass) of odorless vegetable oil into it.

    Cut the eggplants into slices 0.5-1 centimeters thick. Place the eggplant slices in a pan with oil and add salt and sugar so that the eggplants release their juice.

    Cut the onion into half rings. If the bulbs are large, then cut them in half (a quarter of a ring). Place onions over eggplants.

    Next comes a layer of pepper. Cut the pepper into strips or half rings.

    This step is optional and can be skipped. I don’t like tomato skins in winter salads, so I always remove the skins during cooking. It does not take a lot of time. To quickly remove the skin from tomatoes, make a shallow cross-shaped cut into the tomato. Then dip the tomato in boiling water for a couple of seconds, then in cold water. The peel is easily removed.

    Cut the tomatoes into 6-8 pieces, into slices. Place the chopped tomatoes in the next layer in the pan. Place the pan over medium heat until it boils.

    After boiling, reduce the heat and simmer for 20-30 minutes over low heat, gently stirring the salad 2-3 times, trying not to disturb the integrity of the vegetables. Then add chopped garlic and vinegar to the top ten, cook for another 5 minutes.

    While the Ten salad is cooking, prepare the jars. Wash the jars of soda and sterilize them in a way convenient for you. Place the boiling salad in jars and roll up the lids. Turn the salad jars upside down, cover them with a blanket and leave them until they cool completely.

I always make “ten” for the winter, everyone loves it and eats it with pleasure. The salad is really tasty, all the vegetables go well together. In my recipe, the vegetables are placed randomly, not in layers, and you can gently mix them. I try to cut the carrots thinner, because one time they turned out a little tough.
