Cook them until golden brown on both sides.

For lunch I decided to cook eggplants, bell peppers and soy sauce in a frying pan. I slightly changed the order of frying the vegetables. First, I fried the bell pepper for no more than a minute, added onion to the pepper, fried everything together for about a minute (over high heat), removed the fried vegetables from the frying pan with a slotted spoon into a separate cup, and sent the chopped eggplants into the frying pan. Once the eggplants were nicely browned on both sides, I added fried onions and bell peppers to the pan. In a thin stream I poured the soybean dressing with starch and garlic into the vegetables, quickly mixed everything, sprinkled with herbs and removed from the heat. This is a very tasty, spicy salad prepared in the traditions of Asian cuisine. It is very good both hot and chilled. I recommend cooking it! Thanks for the recipe, Zhemchuzhina!
