STEP 1
How to make shrimp dumplings? To begin, prepare all the necessary ingredients according to the list. Take the highest grade flour. You need large, selected or first category eggs. Use any vegetable oil. I have sunflower.
STEP 2
Sift flour and salt into a bowl and make a well in it.
STEP 3
Add eggs and vegetable oil. Knead an elastic, homogeneous dough. Please note that you may need more or less flour; read more about the properties of flour in the article, link at the end of this recipe. But don't rush to flour the whole dough trying to get rid of stickiness. Otherwise, the dough will become rubbery and unyielding. It is better to sprinkle the table and rolling pin with flour when rolling. The dough itself will take as much as it needs.
STEP 4
Roll the dough into a ball, wrap in cling film and leave to rest for 20 minutes.
STEP 5
In the meantime, prepare the filling. You can replace the shrimp with other seafood, for example, squid. You can take classic cottage cheese without additives or with additives. This way you can vary the taste of the dumplings. You can replace cottage cheese with soft cottage cheese or processed cheese.
STEP 6
Pre-cook the shrimp in 1 boiling salted water for 2-3 minutes. Save the broth. Then cool the shrimp, remove the head and shell. It is also advisable to remove the black stripe on the back of each shrimp. Cut large shrimp into small pieces. My shrimp were already peeled and small, so I didn’t cut them.
STEP 7
In a bowl, combine cream cheese, shrimp, lemon zest, salt and pepper. Mix thoroughly.
STEP 8
Divide the dough into 2-3 equal parts. Roll out each part on a floured table into a thin, oblong, even rectangle. If necessary, trim the edges with a knife. Place the filling on one edge of the rectangle with a teaspoon, spaced apart.
STEP 9
Cover the filling with the free portion of the dough. Press the edges. Using a knife, cut the dough into equal squares. I have a figured knife. If you have a regular knife, you can press the edges with a fork. If you wish, you can give the dumplings a traditional shape. I wanted to step away from the usual look.
STEP 10

STEP 11
Stir flour into cold cream. This will thicken the sauce. You can leave the sauce liquid if you wish.
STEP 12
Heat olive oil in a frying pan over low heat. Add halved garlic cloves and a sprig of fresh basil. Fry until fragrant. Remove the garlic and basil. You will learn how to choose the right frying pan from the article, the link is at the end of the recipe below the steps.
STEP 13
Pour cream into the pan. Cook the sauce, stirring, for 3-4 minutes until slightly thickened. Finally add salt to the sauce. Turn off the heat. The sauce is ready. In addition to the creamy sauce, you can serve the dumplings with Italian-style pesto sauce.
STEP 14
Bring the shrimp broth to a boil in a saucepan over medium heat. Place some of the dumplings and boil for 3-4 minutes until done. When ready, the dumplings will float to the surface.
STEP 15
Place the finished dumplings with shrimp and cheese on a plate and pour over the creamy sauce. Sprinkle with ground black pepper and lemon zest. Garnish with fresh herbs and serve. Bon appetit!
