Delicious scrambled eggs with smoked brisket and tomatoes

STEP 1
We are preparing ingredients for our dish.
STEP 2
We cut all the ingredients into cubes and the ham into strips. Tomatoes in half rings.
STEP 3
I first fry the onions, as soon as they start to become translucent I add the ham and brisket. Fry for about 3 minutes.
STEP 4
Next, add bell pepper and fry for another 3-4 minutes. I fry until the pepper becomes soft. Salt and pepper at this stage.
STEP 5
I add tomatoes. As soon as the tomatoes soften, I remove the skins from the tomatoes; they come out very easily.
STEP 6
I add tomato paste. If summer tomatoes are juicy and aromatic, then you don’t need to add paste. But in the winter months it is appropriate.
STEP 7
Stir and simmer for just a couple of minutes.
STEP 8
I beat the eggs so as not to puncture the yolks. I turn down the fire.
STEP 9
And then my secret! I carefully mix the whites with the resulting mass of vegetables and meat. I try not to catch the yolks. Fry for about 2 minutes until the whites are ready (not liquid). The yolks should remain liquid.
STEP 10
Sprinkle with green onions! Now our dish is ready to be served.
STEP 11
Carefully remove the yolks from the pan along with the “substrate” and place them on plates. Bon appetit!
