STEP 1
How to make cottage cheese cake with fruits? Prepare the products according to the list. You can take any fruit of your choice. Any syrup will do: sugar, berry, fruit. Wash the eggs and dry with paper towels. Separate the whites from the yolks. Beat the whites into a fluffy foam with a mixer. Set the bowl with the whipped egg whites aside for a while.
STEP 2
Combine raw yolks with sugar and grind until white. You can do this simply with a whisk or, if you don’t want to strain, with a mixer or blender. Melt the butter in any way convenient for you. Mash the cottage cheese with a fork.
STEP 3
Add warm melted butter and mashed cottage cheese to the beaten yolks. Stir. Pour flour into the curd mixture and add soda slaked with vinegar. Stir until smooth. Keep in mind that you may need more or less flour - use the consistency of the dough as a guide.
STEP 4
Mix (by hand, without beating, but by stirring with a spatula or whisk) the whipped whites into the dough. Do this carefully so that the dough remains fluffy due to the fluffiness of the whipped egg whites.
STEP 5
Place the finished dough in a baking dish (18-20cm), greased with oil. Place in the oven preheated to 180 degrees for about 30-50 minutes. Focus on your oven. Check the readiness of the sponge cake with a skewer. Remove the finished sponge cake from the mold. Cool and cut into 3 layers.
STEP 6
For the cream, beat heavy cream (fat content at least 33%) with powdered sugar in a blender into a fluffy cream. Stir cottage cheese, mashed through a fine sieve, into the cream. Use wet cottage cheese for the cream. This will be easy to mix into the cream. If the cottage cheese is dry, then first grind it with a small amount of milk or cream.
STEP 7
Soak the finished cakes in syrup mixed with water or alcohol and spread with curd cream. Place chopped fruit on each cake layer. I used canned pineapples. And I soaked the cakes with syrup from them.
STEP 8
Collect the entire cake in this way and place it in the refrigerator so that the cream hardens and the cake is well soaked.
STEP 9
Decorate the finished cake to your liking. You can decorate with colored whipped cream, you can fill it with chocolate and decorate with fruit, or you can simply sprinkle it with sponge crumbs or grated chocolate. Choose for yourself!
