  1. STEP 1

    STEP 1

How to make a fruit pie? Prepare all products according to the list. Now take the ingredients for the dough: it is better to keep the butter in the refrigerator before mixing, it should be cold

  2. STEP 2

    STEP 2

In the bowl of a blender, combine the sifted flour and powdered sugar. Add cold butter and grind into crumbs.

  3. STEP 3

    STEP 3

Add cottage cheese to the butter crumbs and mix everything again. If there is not enough moisture from the cottage cheese and the dough does not come together, add 1-2 tbsp. cold water (you need to add in small portions so as not to overdo it with moisture).

  4. STEP 4

    STEP 4

We should end up with moist crumbs that can then be collected into a ball.

  5. STEP 5

    STEP 5

Gather the finished dough into a ball, wrap the ball in film and place in the refrigerator for 30 minutes.

  6. STEP 6

    STEP 6

While the dough hardens, prepare the filling. Take plums, starch, cinnamon and powdered sugar. Depending on the acidity of the plums and powdered sugar, we take more or less.

  7. STEP 7

    STEP 7

Wash the plums, dry them, remove the pit and divide them into 4-6 parts, depending on the size and your desire.

  8. STEP 8

    STEP 8

Remove the dough from the refrigerator, place it on baking paper or silicone sheet and roll it out to a thickness of 3-4 mm. Sprinkle the dough with an even layer of starch, not reaching the edges 3-4 centimeters. Second option: you don’t have to pour the starch onto the dough layer, but mix pieces of plums with the starch. But I like it better when the starch is distributed over the dough, and a layer of plums is placed on top of it.

  9. STEP 9

    STEP 9

Now place the plum pieces on the starch layer, also not reaching the edge 3-4 cm.

  10. STEP 10

    STEP 10

Sprinkle cinnamon and powdered sugar on top of the plums. Fold the edges of the dough over the filling, as in the photo. Bake in an oven preheated to 180 C for about 25-30 minutes until done.

  11. STEP 11

    STEP 11

Remove the pie from the oven and let cool. Sprinkle with powdered sugar and serve. Bon appetit!

Despite my experience in baking, I have never baked a pie like this before. Although I’ve been eyeing these interesting open pies for a long time. My plum harvest is starting to ripen, so I started looking for an appropriate recipe and found this one. I really liked the curd biscuit, the dough just melts in your mouth, the filling turned out super juicy. By the way, my plums are still sour, I decided to sprinkle them with sugar to form something like a syrup. I also sprinkled starch on the bottom, I think it’s even better. The dough turned out to be very tender, so due to the lack of skill in this matter, I was not able to make beautiful folds. But now I know that the dough needs to be kept in the refrigerator longer) Very interesting recipe! Now I will try to cook with apples and berries.

What a delicious and beautiful curd biscuit with fruit I made using this recipe! It cooks quickly, without any hassles, the recipe is just a fairy tale! I made a galette with apples (I just cut them into thin slices) and frozen blueberries. I didn't have cottage cheese in the refrigerator, but I did have ricotta cheese. It is more moist than cottage cheese, so I did not add water to the dough. This pie is delicious to eat both warm and cold. Thank you very much for the recipe!

Everyone really liked the galette; I had previously only made similar cookies with nuts, raisins, lemon, apples, and I was delighted when I found this recipe. During the cooking process I made several changes, based on my experience. I took 200 g of flour and cottage cheese, 125 g of butter (slightly softened), and added a teaspoon of vanilla sugar. I replaced the starch with 50 g of chopped walnuts and pressed them into the rolled out dough with a rolling pin. I sprinkled the plums with only 1 teaspoon of powdered sugar. Such changes (starch, powder) are due to the fact that I have great restrictions on the amount of fast carbohydrates in food, but I want something tasty. I rolled out the dough on silicone, transferred it to baking paper on a rolling pin, and assembled the pie on it. Brush the edges with egg wash before putting them in the oven. I baked it for 35 minutes at 180 degrees. The galette turned out amazing, with a slight plum sourness and a wonderful autumn aroma of cinnamon, it has been hanging in the apartment for the second day. On the author's advice, I put the remaining half in the refrigerator overnight, and today I took it out an hour before serving. The dough was slightly soaked in the plum-cinnamon syrup, which brought out the flavor even more. I thank the author for the idea; it looks like this delicacy will not only catch on in our family, but will become one of our favorites.

It’s a pity that I didn’t come across this plum biscuit when we had plums in our garden and I didn’t know what to do with them. I'm literally crying... Irisha, do they retain their juiciness after baking, can you tell me? Or do they still dry out? I made it with apples so far

Alina, if you have something other than plums, you can also use apples. As for juiciness, plums retain it, but this probably depends on the plums. My plums were large and fleshy, and after baking they remained juicy.
