STEP 1
How to bake crucian carp in the oven so that it turns out tasty, aromatic and juicy? The recipe is very simple. Start by preparing the sauce. Use thick mayonnaise with a fat content of at least 67%. Lemon juice thins the sauce, and if the mayonnaise is already runny, the sauce simply will not stick to the fish, but will drain from it. Therefore, the denser the mayonnaise, the better.
STEP 2
In a bowl, combine mayonnaise, lemon juice, fish spices, paprika, salt and pepper. If you use ready-made spice mixtures, be sure to read the ingredients on the package. Often such mixtures already contain salt and pepper, take this into account, otherwise you risk oversalting and peppering the dish.
STEP 3
Mix everything thoroughly. You should get a viscous but slightly flowing homogeneous sauce.
STEP 4
Now prepare the fish. You need large crucian carp, weighing at least 500 g. You can take fresh or frozen fish. Thaw frozen fish first (for proper defrosting, see the recipe link).
STEP 5
Clean the fish from scales and entrails, remove the gills and fins. Rinse thoroughly inside and out. Then blot the fish with paper napkins. If the fish is very large, then make shallow cuts across the carcass on both sides.
STEP 6
Cut the onion into small cubes or half rings.
STEP 7
Carefully coat the fish with a brush with mayonnaise sauce inside and outside on all sides.
STEP 8
Stuff the fish with onions.
STEP 9
Place the crucian carp on a baking sheet on a sheet of foil. Brush the top with the remaining sauce.
STEP 10
Carefully wrap the fish in foil, being careful not to let the top of the foil touch the fish, otherwise the foil may stick during baking and will only come off together with the skin, which will ruin the appearance of the dish.
STEP 11
Place the baking sheet in an oven preheated to 190°C. Bake for about 20 minutes. Determine the exact baking time and temperature based on your oven. Then open the foil and return the crucian carp to the oven for another 10 minutes or a little longer until a crispy golden brown crust appears.
STEP 12
Transfer the finished fish to a plate and serve, garnished with herbs and fresh vegetables. Bon appetit!
