    How to make classic Tbilisi salad with beef? According to the classic recipe, fresh red beans are used in preparing the salad. But if you don’t have time to prepare dry beans, which is quite a lot, then you can add canned ones. Dry beans need to be washed, filled with cold water, and left overnight so that they swell well.

    In the morning, drain the water from the beans, add fresh water and cook until tender. But beans should not be overcooked so that they do not fall apart and spoil the taste and appearance of the salad. Drain the water, place the beans in a colander and let cool completely.

    For the classic “Tbilisi”, beef, chicken or turkey are used. All these types of meat are considered low-calorie and healthy. It is better to use fresh and young beef. Wash the beef, cut off the veins and skin, cut the meat into pieces and boil in salted water until tender, 30 minutes is enough.

    Remove the meat from the broth, cut into small cubes or divide into thin fibers.

    Blue onions are a must for this salad. Peel the onion, cut into feathers or strips. Onions need to be marinated in wine vinegar, leaving the chopped onions in it for half an hour. Then drain the marinade. If blue onions are not available, you can use regular white onions.

    Wash the bell pepper, cut out the stalk with seeds, and cut the flesh of the pepper into thin strips. Bell peppers can be used in different colors for contrast and brightness. I recently visited a restaurant that served Tbiliso salad. And I won’t like it terribly, since it was the author’s interpretation. Somehow everything was distorted.😁 But judging by the ingredients, it was clear that this must be a very tasty dish. So I decided to repeat it at home. Found the recipe here. The only thing is that I’m not a gourmet, and I decided that I couldn’t distinguish the taste of boiled beans from the taste of canned ones. That's why I used canned food - it's faster. The salad is very refreshing onions soaked in apple cider vinegar. I also don’t like cilantro, but it’s in place in this salad and perfectly complements the other ingredients. And the salad turned out very beautiful. I didn’t cut the beef, but took it apart into fibers. This time I missed and didn’t put in the pomegranate seeds; they would have come in very handy. In general, although we are lovers of mayonnaise salads, this one became a table favorite and was eaten instantly.
