STEP 1
How to fry classic pancakes with kefir? Prepare all the necessary ingredients. Kefir and eggs must be removed from the refrigerator in advance; they should be at room temperature. This helps the dough rise well and produce fluffy pancakes. For a special aroma that evokes appetite, you can add a pinch of vanillin to the pancake dough; a larger amount will add bitterness to the finished dish.
STEP 2
Beat the egg into a deep bowl (so as not to stain the table). Add salt and whisk well until a homogeneous mixture is obtained, the egg should disperse. Before using, wash the egg in warm water and soda, as there may be harmful bacteria on its surface.
STEP 3
Pour kefir into the bowl with the egg mixture (be sure to be warm; if you don’t have time to wait for it to warm up at room temperature, you can heat it in the microwave, but only for a few seconds so that it doesn’t turn into cottage cheese). Add sugar. If desired, its quantity can be increased. Stir the mixture until the sugar is completely dissolved.
STEP 4
Sift the flour through a sieve, it is better to do this several times. Combine flour and soda, stir so that the soda is distributed throughout the flour. And pour in parts into a bowl of liquid, stirring each time with a spoon or whisk so that there are no lumps of flour left. You may need a little less or more flour, you need to be guided by the consistency of the dough. It should turn out like sour cream. When the dough is ready, leave it on the counter for 20 minutes.
STEP 5
Heat vegetable oil in a frying pan. Place the dough by the tablespoon into the frying pan, approximately the same volume, so that the pancakes turn out the same size and beautiful. Fry the pancakes on one side until the dough on top sets and bubbles appear over moderate heat, about 2-3 minutes.
STEP 6
Then turn the classic pancakes over in a frying pan with a wooden spatula and fry on the other side until golden brown. After turning over, the pancakes are already quickly fried, so the main thing is not to overcook them so as not to burn. Remove the fluffy pancakes from the frying pan. If a lot of oil was used during frying, then the pancakes can be placed on a paper towel to drain off excess fat. Serve the pancakes with tea, with sour cream or jam to taste. Enjoy your tea!
