STEP 1
How to make a classic Olivier salad with beef? Prepare your ingredients. Cooking times are given taking into account that all salad vegetables, eggs and beef are raw. If the meat has already been boiled, potatoes and carrots, eggs too, then the salad preparation time is 15 - 20 minutes. I dress the salad with mayonnaise, it is better to use homemade mayonnaise. You can also season the salad with a mixture of mayonnaise and sour cream, natural yogurt or sour cream.
STEP 2
Boil the eggs hard. Read about how to do this correctly in a separate article at the link at the end of the recipe. Place potatoes (choose non-starchy varieties) and carrots in their skins in boiling water and cook until tender. Drain the water. You can also cook the vegetables already peeled and cut into cubes, it is believed that this way the vegetables will have less of a vegetable taste.
STEP 3
Take beef fillet without fat and streaks. Pour water into a saucepan and bring to a boil. Place the meat in boiling water, reduce the heat and cook the beef until tender, 1-2 hours. Cooking time will depend on the meat chosen. Remove the beef from the broth and cool. You can use the remaining broth to make soup or sauce.
STEP 4
Take a salad bowl or a deep bowl for the salad. Peel the boiled and cooled potatoes and cut them into cubes. Try to cut into cubes close in size to peas, so the entire cut will look harmonious and neat. Place chopped potatoes in a salad bowl.
STEP 5
Peel the carrots and cut into cubes. Add chopped carrots to potatoes.
STEP 6
Remove the pickled cucumbers from the brine and rinse (optional) with water. Cut the cucumbers into small cubes and add to the salad bowl.
STEP 7
Peel the boiled and cooled eggs and cut into cubes. Add chopped eggs to salad.
STEP 8
Cut the boiled and cooled meat into cubes or disassemble into fibers. Add chopped beef to salad.
STEP 9
Peel the onions and chop finely. Add chopped onions to the salad bowl. You can replace onions with lettuce, but it’s better not to give them up altogether.
STEP 10
Carefully open the jar of green peas and drain the liquid (it can be used in preparing some dishes). Add the required amount of peas to the salad.
STEP 11
Add mayonnaise, salt to the salad and mix. It is recommended to add mayonnaise to the salad before serving.
STEP 12
The finished Olivier salad with beef can be served. It can be served as an independent dish, or as a salad for an everyday or holiday table. Bon appetit!
