    How to make a classic Olivier salad with beef? Prepare your ingredients. Cooking times are given taking into account that all salad vegetables, eggs and beef are raw. If the meat has already been boiled, potatoes and carrots, eggs too, then the salad preparation time is 15 - 20 minutes. I dress the salad with mayonnaise, it is better to use homemade mayonnaise. You can also season the salad with a mixture of mayonnaise and sour cream, natural yogurt or sour cream.

Place potatoes (choose non-starchy varieties) and carrots in their skins in boiling water and cook until tender. Drain the water. You can also cook the vegetables already peeled and cut into cubes, it is believed that this way the vegetables will have less of a vegetable taste.

    Take beef fillet without fat and streaks. Pour water into a saucepan and bring to a boil. Place the meat in boiling water, reduce the heat and cook the beef until tender, 1-2 hours. Cooking time will depend on the meat chosen. Remove the beef from the broth and cool. You can use the remaining broth to make soup or sauce.

    Take a salad bowl or a deep bowl for the salad. Peel the boiled and cooled potatoes and cut them into cubes. Try to cut into cubes close in size to peas, so the entire cut will look harmonious and neat. Place chopped potatoes in a salad bowl.

    Peel the carrots and cut into cubes. Add chopped carrots to potatoes.

    Remove the pickled cucumbers from the brine and rinse (optional) with water. Cut the cucumbers into small cubes and add to the salad bowl.

I prepared a salad for lunch according to the classic Olivier recipe with beef. This is truly my favorite salad! We also call it “winter” in our family, but we eat it at any time of the year. Due to the lack of beef, we had to replace it with pork. I took care of it first, cooked it and let it cool. I also boiled potatoes and carrots. I cut all the vegetables, meat and eggs into small cubes; I did not add green peas. I had lightly salted cucumbers, the taste of the salad with them was milder (pickled ones add a piquant sourness). We ate the salad with pleasure! It is not only delicious, but also very filling! Thanks a lot!

For me, the Olivier salad with boiled beef is a festive option. I cook this exclusively for the “very, very” holidays, this is New Year and my husband’s birthday. This year, my husband asked me to make Olivier with beef for Valentine's Day. Well, is it possible to refuse such a request from your beloved man? I prepared the salad strictly according to the recipe, excluding only onions, which I don’t really like in Olivier. But, unlike the author’s recommendation, I always cool the beef in the broth, because this way it does not dry out and remains very juicy in the salad. Accept gratitude from our family!
