STEP 1
How to make a classic Mannik pie with kefir? Start the process by preparing the semolina. To do this, pour it into a bowl and fill it with kefir of any fat content.
STEP 2
Stir and leave the mixture in the refrigerator for about 40 minutes so that the semolina swells well. You can make this mixture ahead of time to save time preparing the cake.
STEP 3
In a separate larger bowl, beat the eggs and add sugar. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.
STEP 4
Whisk the eggs and sugar until smooth. Light bubbles should form.
STEP 5
Sift premium wheat flour into the eggs. Don't ignore sifting, as it is extremely important for the fluffiness of your baked goods.
STEP 6
Stir the mixture with a whisk until smooth so that there are no lumps. For convenience, you can use a mixer, but still, first mix the flour with a regular whisk or spoon, otherwise at high speeds of the mixer the flour may scatter to the sides.
STEP 7
Add baking powder and mix everything again until smooth so that the baking powder is evenly distributed throughout the egg-flour mixture.
STEP 8
Add semolina and kefir mixture to the bowl.
STEP 9
And mix everything again with a mixer until smooth. This is the dough you should end up with. Thick, but flowing freely from the rim.
STEP 10
Grease the bottom of the baking dish with a drop of sunflower oil. I have a silicone mold with a diameter of 18 cm. It is very convenient to remove finished products from it. Bake the manna in an oven preheated to 180 degrees for 40 minutes or until done, because cooking time may vary due to the individual characteristics of ovens.
STEP 11
Pierce the pie in the very middle with a wooden toothpick and, if it is dry, remove the pan from the oven - the pie is ready. Cool it completely and serve. Bon appetit!
