Take sweet and sour varieties of apples, with these the charlotte will turn out tastier and more aromatic. I cooked using 4 eggs.

    Wash the eggs and beat them into a bowl. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Start beating them with a mixer, gradually increasing the speed. Pour sugar into the eggs in portions. When all the sugar has been added, continue beating until a fluffy light mass is obtained. This will take about 5 minutes.

Check readiness with a wooden skewer - inserted into the center, it will come out dry. Take out the mold with charlotte and cool it.

Charlotte is probably the most popular pie. At least, I often bake it with different fillings) This time I found on the website a recipe for classic charlotte with baking powder. I like it when thin slices of apples are placed on the surface of the pie. The portion of dough according to the recipe turns out to be large, which is good - there will be enough for everyone) I took a wide mold so that the charlotte would bake well. I added one sachet of baking powder weighing 10 g. While kneading the dough, I noticed that it was a bit runny, so I added a couple of tablespoons of flour. It is always better to focus on the consistency of the dough, because the flour is different, and so is the size of the eggs. I had selected homemade eggs. I also added a pinch of salt. On my own behalf, the first layer was not apples, but pieces of pears. The pie was baked for 40 minutes. It rose well and turned out airy, soft and porous. The taste is great, not too sweet. The whole family liked the charlotte.
