STEP 1
How to make classic apple strudel? Prepare the ingredients for the test. The average amount of flour is indicated. It can take either less or more, it depends on its quality, humidity, egg size, etc. Read more about the properties of flour in the article at the end of the recipe. Take refined, odorless oil.
STEP 2
Sift the flour into a large bowl. Do not add all the flour at once; it is better to add it when kneading if necessary. To begin, sift about 400 grams.

Add salt and egg to the flour, mix lightly with a fork. Pour in the required amount of oil and warm water. Why does the water have to be warm? Warm water will cause gluten to develop faster, which is responsible for the elasticity of the dough. Knead the dough first with a fork and then with your hand.

Now decide whether to add the rest of the flour - the dough should come together and stop being sticky.
STEP 5
As soon as this happens, place the dough on the work surface and knead well until completely smooth.
STEP 6
Cover the dough with a cloth or film and leave on the counter for 30 minutes. During this time, gluten will develop even better, which will improve the quality of the dough.
STEP 7
While the dough is resting, prepare the filling. Prepare food for her. It is best to take sour varieties of apples for strudel; they are more aromatic in baked goods. I have an Antonovka. Take light, seedless raisins. I used cane sugar, it gave the filling a light caramel note.

You will also need butter to grease the top of the roll.

Pour boiling water over the raisins and leave for 15 minutes to swell.
STEP 10
Wash the apples well and dry. Cut each apple in half and cut out the center with the seeds. Then remove the skin and cut the pulp into small cubes.

Place the chopped apples in a bowl and pour lemon juice over them. This will prevent them from darkening.
STEP 12
Place the steamed raisins in a sieve and then place on a paper towel to dry.
STEP 13
Chop the walnuts with a knife.
STEP 14
Add raisins, nuts, sugar and cinnamon to apples.
STEP 15
Mix all ingredients. The filling is ready.
STEP 16
Lay a linen or cotton towel on the table. Dust it with flour. Also roll the dough in flour. Roll it directly onto the fabric into a small circle with a rolling pin, trying to roll the edges thinner.

And now start stretching the dough with your hands, or rather, your fists. Place the back of your fists under the dough and pull in different directions. The dough will instantly become thin. Moving your hands over the entire surface, stretch it into a large layer. Then spread the dough onto a cloth and stretch out its edges.
STEP 18
It should become so thin that the design on the fabric can be seen through it. I trimmed the thick edges with a knife.
STEP 19
Place the filling on the dough, retreating a couple of centimeters from one edge and more from the other, 5-7. Distribute it evenly.
STEP 20
Using a towel, roll the dough and filling into a roll. Twist the edges, pinch off excess dough and fold.
STEP 21
Line a baking tray with baking paper. Using a towel, transfer the roll to a baking sheet. It turns out to be a rather long roll; it only fit diagonally on my baking sheet measuring 30*40 cm. You can divide the dough into two parts and make two small strudels.
STEP 22
Melt the butter in any way you like. Using a pastry brush, brush the top of the roll. But not all the oil, but only a small amount.
STEP 23
Place the roll in the oven, preheated to 180°C and bake it for about 35-45 minutes. Brush the top of the roll with butter every 10 minutes. Calculate the exact baking time and temperature based on your oven. For more information on how ovens work, see the link at the end of this recipe.
STEP 24
Bake the strudel until golden brown. Then take it out and cool slightly. Traditionally, strudel is served warm, sprinkled with powdered sugar and garnished with berries. Be sure to serve a scoop of vanilla ice cream with the warm strudel - it will act as a sauce.
