    Pour the kefir into the bowl in which you will make the pancake dough. Take larger dishes, because... The kefir and dough will greatly increase in volume. Heat the kefir until it “curls” slightly. In a microwave oven this is 1 minute at power 1000.

    Add baking soda. It is thanks to soda that the pancakes always turn out fluffy, although the dough contains neither eggs nor yeast.
