    As soon as the sugar has turned into dark caramel, we need to lower the temperature so as not to burn the sugar, since later our dough may turn out bitter. In order to reduce the temperature, we use boiling water and very carefully introduce it into the caramel. Be careful as the caramel will bubble!!!

    Next, add the remaining sugar to the caramel, let it dissolve and bring the mixture to a boil. Remove from heat.

    Add butter, stir until butter melts.

    1 tbsp. mix wheat flour with spices and add to the still hot caramel (the flour needs to be boiled) and stir thoroughly.

    Let the mixture cool to room temperature.

    Mix rye and wheat flour with soda.

    Add 1 whole egg and 2 yolks to the cooled caramel (I beat them a little with a fork beforehand), stir.

    Adding flour in parts, knead the dough. The finished dough needs to be kneaded well, it should turn out a little soft and at the same time keep its shape well

    The kneaded ball of dough should not spread. Place the finished dough in a bowl and in the refrigerator for a day, but if you don’t have time, then at least for 4 hours.

    This dough can be prepared in advance and stored in the refrigerator for about 3 weeks. Take the chilled dough out of the refrigerator and let it warm up for at least 30 minutes.

    Roll out the dough (it is best to do this between 2 sheets of parchment) and cut out future figures, animals, wise men, shepherds

    Roll out to about 3-4 mm thick and bake for about 8 minutes. at 190 C (baking time depends on size, small cookies take 5 minutes to cook).
