    Add all the spices, butter and soda to the sugar mixture. The mixture will change color slightly. While stirring, dissolve all ingredients. Cool the mixture to room temperature. In the next step, add flour in parts, monitoring the consistency of the dough. It may take you more or less flour than it did for me.

    Add flour to the cooled mixture and knead the dough. Gather the dough into a ball. The dough comes together easily into a ball if you roll it in your hands, but working with such dough is difficult - it sticks to your hands a lot. Wrap the dough in film and put it in the refrigerator overnight or for at least three hours. You can store this dough in the refrigerator for several days for use later. Remove the chilled dough from the refrigerator. Turn the oven on to about 170 degrees.

    Pinch off pieces of dough and place each one on baking parchment one at a time. Cover the top with another sheet and roll the dough between two sheets. Roll out into a very thin layer, remove the top sheet of paper and use cookie cutters to cut into various shapes. Remove excess dough. Transfer the paper with cookies to a baking sheet and bake in a preheated oven for about 5-10 minutes. Focus on your oven.

    Remove the finished cookies from the paper and cool. They will turn out very crispy (if the dough has been rolled out thinly). Serve it with tea, milk, hot chocolate or with grog and mulled wine. In a closed container, these cookies can be stored for many days!

The cookies are simply divine!!! It took me a little more flour. Place the dough in the refrigerator for 3 hours. Using two parchments, as described in the recipe, it was possible to roll it out quite easily))) Those that were cut thinner were more crunchy, but the thicker cookies were incomparable. I baked for 7 minutes, enjoying the amazing aromas. I recommend it to everyone! Thanks for the recipe ❤️

This was my first time making gingerbread cookies, and this recipe was my first experience with them. But I must say right away, may the author forgive me, I could not help but make a few digressions. I didn’t add cloves because I don’t like them and I don’t have them)) I replaced brown sugar with regular white sugar, added a little less honey (about 25 grams), and more flour 😅. Well, I don’t like it when the dough has to be difficult to work with and sticky. As if it was a challenge for me, I accepted it and added 235 grams of flour instead of 200 grams. And I rolled out the dough without an additional sheet of parchment, just with a rolling pin. It’s pleasant, it doesn’t stick to your hands. Everything would show the baking itself. I kept the cookies in the oven for 7-8 minutes. And what can I say: crispy, yet not hard, aromatic cookies! You can smell honey and ginger, you can even smell cardamom! Nothing stuck to my parchment. I don't know how different the flavor would have been if there had been cloves and brown sugar, but I liked the resulting flavor! Thanks for the recipe. Not difficult, quite fast and tasty)))

It sticks like hell to your hands, to the rolling pin, I was exhausted with this dough. But the cookies turned out excellent.
