Christmas cupcake with cherries and lemons
Ingredients

STEP 1
Grind 125 grams of fresh frozen cherries
STEP 2
Pour 240 grams of soft butter into a bowl and add 150 grams of sugar. Beat with a mixer for three minutes, gradually adding 4 eggs one at a time. Also, from two eggs, separate the yolk from the white, pour the yolks into the total mass, and set the whites aside , we will still need them!
STEP 3
Add 10 grams of baking powder and a pinch of salt to 270 grams of flour. Stir. Pour the flour into the liquid mass.
STEP 4
Cut the lemon into 2 parts and from one half of the lemon, squeeze the juice into the total mass through a fine sieve. Mix with a mixer until smooth.
STEP 5
Add chopped cherries to the dough and mix until smooth.
STEP 6
Grease the baking tray in which we will bake with butter and pour in the dough. Place in a preheated oven at 180 degrees and bake for 35 minutes. Check for doneness with a skewer or toothpick. The pie is ready! Let's start with the glaze.
STEP 7
Squeeze the second half of lemon juice into 100 grams of powdered sugar and mix until smooth.
STEP 8
Beat the remaining whites from two eggs until stiff peaks form. When the whites are whipped, without stopping beating, gradually add a mixture of powdered sugar and lemon juice. The glaze is ready!
STEP 9
Apply glaze to the cake and decorate as desired, I decorated with pomegranate seeds. The cake is ready!
