STEP 1
How to bake chocolate sponge cake at home? Prepare all the necessary ingredients. Take a deep bowl convenient for beating products, beat eggs into it and add sugar. The bowl must be dry and free of fat, otherwise the eggs will not beat.
STEP 2
Beat eggs with sugar into a fluffy mass using a mixer. Well-beaten eggs are very airy and the mass becomes light. Before using, wash the eggs in running water and soda, as there may be harmful bacteria on their surface.
STEP 3
Sift flour, soda and cocoa through a sieve or using a special mug. Then, using a whisk, mix the dry mixture into the eggs by hand. Do this carefully so as not to precipitate the fluffy egg mass. Since flour from different manufacturers has different properties, you may need a little less or more of it.
STEP 4
Stir until smooth so that there are no lumps. At the same time, the mass should remain airy. The consistency of the dough will be like thick sour cream.
STEP 5
Line a baking tray with baking paper. Pour the finished dough onto a baking sheet and level it using a spatula or silicone spatula. Place the baking sheet in an oven preheated to 180 degrees and bake for about 15 minutes. The times are approximate, be guided by the operating characteristics of your oven.
STEP 6
Roll the finished hot biscuit into a roll along with paper. Cover with a towel and cool. In this form, the biscuit will be soft and pliable after cooling.
STEP 7
How to make the filling for a biscuit roll? Take soft cottage cheese, rub it through a sieve or punch it with an immersion blender so that it becomes soft in consistency and without grains.
STEP 8
Using a blender, beat chilled heavy cream, at least 33% fat, with powdered sugar into a fluffy cream. Using a whisk, mix soft cottage cheese and buttercream. Do this with gentle movements from bottom to top so that the mass remains airy.
STEP 9
Unroll the cooled roll and separate it from the paper. Grease the biscuit over the entire inner surface with the resulting curd cream.
STEP 10
At this stage, the taste of the roll can be varied with any berries: strawberries, raspberries, blueberries or wild strawberries. If you wish, you can add chopped nuts, jam or dried fruits to the filling. There is a lot of room for your imagination.

Then roll everything into a roll.

How to make glaze for sponge cake? Melt chocolate with cream. Cool to room temperature.
STEP 13
Place the rolled roll seam side down and brush the entire surface with chocolate glaze. It is very convenient to do this with a brush.
STEP 14
Place the chocolate roll with curd cream in the refrigerator to harden for at least 1 hour. The filling should harden a little, otherwise it will not be convenient to cut. Cut the finished roll into pieces and help yourself! Enjoy your tea!
