  1. STEP 1

    STEP 1

How to make chocolate cheesecake? Start with the curd filling. Prepare all the products for her. It is better to take soft cottage cheese (homemade or store-bought), not dry, otherwise grains will be felt in the finished cheesecake.

  2. STEP 2

    STEP 2

In a bowl, combine cottage cheese, eggs, sugar and vanilla sugar until smooth. You can adjust the amount of sugar to your taste.

  3. STEP 3

    STEP 3

Beat with a mixer until smooth. Add semolina and beat again. Leave the filling to stand so that the semolina has time to swell. In the meantime, we'll do the testing.

  4. STEP 4

    STEP 4

Prepare all products for the test. Sour cream and butter must be of high quality; fat content does not matter much. I took 20% sour cream and 82.5% butter. Melt the butter in any convenient way and leave to cool to room temperature.

  5. STEP 5

    STEP 5

In a large container with high sides, beat the eggs and sugar with a mixer.

  6. STEP 6

    STEP 6

Add sour cream, soda and melted butter. Beat until smooth. If desired, you can add the grated zest of 1 lemon to the filling.

  7. STEP 7

    STEP 7

Sift the flour together with cocoa. This is an important point: this way the flour will be saturated with oxygen and the baking will be more airy, and in cocoa we will avoid lumps and the dough will be more homogeneous.

  8. STEP 8

    STEP 8

Pour flour and cocoa into the dough in small portions.

  9. STEP 9

    STEP 9

You should get a thick chocolate dough.

  10. STEP 10

    STEP 10

Pour the dough into a greased baking dish with a diameter of 22-24 cm, level it. Place the curd filling in the center. Bake in a preheated oven at 180°C for 40–50 minutes. It is important not to open the door for the first 30 minutes. Since the dough is biscuit and may not rise well. Also, during baking, the filling may puff up greatly. There is no need to be afraid of this. It will gradually fall off after turning off the oven.

A simple recipe and great results! I had homemade cottage cheese, homemade, instead of sugar there was a sweetener that is not afraid of heat treatment. In my opinion, this is one of those cases when, even during the process, you understand that everything will work out and it will turn out great. The filling was delicious, the dough was also very tasty (yes, yes, I try the dough and filling to understand what I’m missing in them and adjust as necessary, and sometimes I fantasize and add something of my own, in our case everything was enough ). The zest was really asking for it, but I didn’t have any lemon in stock. I baked it in a square ceramic form 23x23 cm, which I did not grease with oil, but covered with parchment, for 45 minutes at 180 degrees. The top of the filling was slightly browned, but this did not affect the taste, if only for the better. And the main point! Everything is prepared in an elementary way: you mix everything for the filling, then for the dough, lay it out, smooth it out - and forget it. I highly recommend it to novice housewives who want to make a positive culinary impression! Despite its simplicity, the chocolate royal cheesecake with cocoa looks very impressive.

My mother-in-law makes this kind of cheesecake, but it’s made with yeast dough. It turns out like a fragrant bun, and inside there is tender cottage cheese. This is biscuit dough. So unusual. It doesn’t seem like a pie, but it’s not a traditional cheesecake either. I will cook again and again) And it’s better to take cottage cheese in rectangular briquettes. It is soft and does not need to be rubbed through a sieve. But if you take cottage cheese in lumps, then you need to rub it through a sieve. I don’t like these extra body movements, so I simplify everything as much as possible.

The photo clearly shows another layer of darker dough, but there is no description of its preparation!
