STEP 1

How to make Chinese peanut salad? Very simple and fast! To begin, prepare the necessary ingredients according to the list. First, prepare the dressing. Any vegetable oil will do, preferably fragrant, unrefined. Typically used in Asian cooking, sesame oil and rice vinegar are used. But you can replace sesame oil with any vegetable oil, and rice vinegar with white wine or apple vinegar.
STEP 2

In a bowl, combine sesame oil, rice vinegar, soy sauce, sugar and chili. Beat with a fork until smooth. You can replace the chili powder with a small, finely chopped piece of fresh hot pepper. Or don't add it at all.
STEP 3

Now prepare the remaining ingredients for the salad. You can add the vegetable part to your taste. You can take fresh peanuts and fry them at home in a frying pan, or you can already roast them from the store. Regular salted roasted peanuts will also work.
STEP 4

Wash the cucumbers thoroughly. Cut off the ends. Cut the cucumbers in half lengthwise and use a spoon to scrape out the seeds. Cut the cucumbers into slices. The skin, if it is not rough, damaged or bitter, does not need to be cut off from the cucumbers.
STEP 5

Peel the garlic and finely chop it or pass it through a press.
STEP 6

Wash the cilantro, dry it and chop it. You can supplement the cilantro with other herbs: parsley, green onions or dill.
STEP 7

In a bowl, combine cucumbers, cilantro and roasted peanuts. Pour dressing over salad and toss to coat.
STEP 8

Serve Chinese salad with cucumbers and peanuts immediately. Fresh cucumbers “don’t like” sitting idle in the refrigerator. They lose their taste and are no longer crispy. Bon appetit!
