    How to make chicken muffins with cheese? Prepare your food. The fillet is suitable from any part of the chicken, I took from the breast. Take kefir of any fat content. Choose natural cheese, without milk fat substitutes, tasty and of high quality. You can add any spices, I chose Provençal herbs.

    Rinse the meat and dry well with paper towels. Grind it in any way - through a meat grinder, in a blender, or just finely chop it with a knife, as I did.

    Peel the onion and chop finely. You don't have to add onions at all; they don't play a big role in muffins.

    Grate the cheese on a coarse grater.

    Take a bowl for the dough. Pour kefir into it, beat in the eggs. Be sure to wash your eggs before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush. Add salt, seasonings and baking soda. Whisk the ingredients until smooth.

    Add meat, onion and cheese to the dough, mix the mixture with a spatula.

    Sift flour into a bowl. Sifting will not only remove possible debris from the flour, but will also make the baked goods more airy and fluffy; do not skip this step. Using a spatula, mix the dough thoroughly until smooth. It turns out to be quite thick, does not flow, but falls from the spatula.

    Use suitable muffin tins. I use silicone ones. It is better to insert special paper inserts into them. If you don't have them, grease the molds with a little vegetable oil. Divide the dough into the molds, filling them almost to the full height - they will rise during baking, but not much.

    Bake the muffins in an oven preheated to 180°C for 30 to 45 minutes. The exact time depends on the features of your oven. Focus on appearance - the muffins should be golden.

There was no kefir, I made it with milk: I quenched the soda with vinegar and used a little more flour. I was afraid that they wouldn’t work out, but they turned out to be such beauties) thank you so much for the recipe) P.S. stuck to a paper basket. It’s better to let the dough rest in the mold right away, without paper liners.
