You can take absolutely any vegetables that you can find in the house. In winter you can use frozen vegetables, in summer fresh.

    Wash the chicken breast under running water and pat dry with a paper towel.

    Wash the potatoes under running water using a brush. If your potatoes are small and young, then it is enough to wash them well and cut them into two or three parts; it is not necessary to peel them. If you have mature tubers, peel them. My potatoes are small, I left the skins.

    Wash the carrots, peel and cut into long, large strips.

    Peel the onions and cut into half rings.

    Carefully peel the pumpkin, wash and cut into small cubes. You can use frozen pumpkin. Wash the bell pepper under running water, remove the stem and seeds, and cut into strips. Peppers can also be used frozen. Take a baking dish and grease with olive oil. Place the chicken breast in the center. Distribute vegetables around: potatoes and carrots.

    Sprinkle halves of onion rings, pumpkin cubes and bell peppers on top. Coat the chicken breast with sour cream, it will make the meat softer and more tender during baking. Drizzle the vegetables with olive oil, sprinkle everything with salt and ground black pepper. Mix the vegetables. Soy sauce lovers can sprinkle it on the dish, you can also add any spices to your taste at this stage.

    Preheat the oven to 180 degrees. Cover the dish with chicken and vegetables with foil and place in the oven for about 35 minutes. Then remove the foil and let the dish brown for about 10 minutes. I prepared a chicken leg for lunch, using a recipe for chicken breast with vegetables in the oven as a basis. I had run out of foil and had nothing to cover the baking sheet with chicken and vegetables, so I first fried the legs until cooked in a frying pan, using refined vegetable oil (replacing it with olive oil). First, I fried the chicken, uncovered, over low heat until it was golden brown. Then I closed the pan and simmered the meat until soft. I added salt after placing the chicken on a baking sheet, and poured in the juice that formed during frying. I also boiled the potatoes until half cooked, after cutting them into small pieces. I chopped the rest of the vegetables and added them to the chicken and potatoes on a baking sheet; I didn’t have pumpkin, so I took a tomato instead. The carrots, bell peppers and tomatoes spent enough time in the oven to become soft (the peppers were baked until al dente). It turned out very tasty! The vegetables came out juicy, aromatic and appetizing. Together with soft chicken - wonderful! Thank you very much!
