STEP 1
How to make juicy chicken breast with vegetables in the oven? Prepare all the necessary ingredients. If you have frozen chicken breast, then defrost it first on the bottom shelf of the refrigerator. Read more about defrosting in a separate article at the end of the recipe. You can take absolutely any vegetables that you can find in the house. In winter you can use frozen vegetables, in summer fresh.
STEP 2
Wash the chicken breast under running water and pat dry with a paper towel.
STEP 3
Wash the potatoes under running water using a brush. If your potatoes are small and young, then it is enough to wash them well and cut them into two or three parts; it is not necessary to peel them. If you have mature tubers, peel them. My potatoes are small, I left the skins.
STEP 4
Wash the carrots, peel and cut into long, large strips.
STEP 5
Peel the onions and cut into half rings.
STEP 6
Carefully peel the pumpkin, wash and cut into small cubes. You can use frozen pumpkin. Wash the bell pepper under running water, remove the stem and seeds, and cut into strips. Peppers can also be used frozen. Take a baking dish and grease with olive oil. Place the chicken breast in the center. Distribute vegetables around: potatoes and carrots.
STEP 7
Sprinkle halves of onion rings, pumpkin cubes and bell peppers on top. Coat the chicken breast with sour cream, it will make the meat softer and more tender during baking. Drizzle the vegetables with olive oil, sprinkle everything with salt and ground black pepper. Mix the vegetables. Soy sauce lovers can sprinkle it on the dish, you can also add any spices to your taste at this stage.
STEP 8
Preheat the oven to 180 degrees. Cover the dish with chicken and vegetables with foil and place in the oven for about 35 minutes. Then remove the foil and let the dish brown for about 10 minutes. The times are approximate, use your stove as a guide. Read more about how ovens work at the end of this recipe. Serve the baked chicken breast with vegetables, sprinkled with finely chopped herbs.
