STEP 1
How to make chepalgash with cottage cheese and herbs? Prepare all the necessary ingredients. Take the kefir out of the refrigerator in advance; it needs to be at room temperature.
STEP 2
Pour kefir at room temperature into a bowl, cup or any other container in which it is convenient for you to knead the dough. Add salt and soda, stir and leave for 2 minutes. Read a separate article about using soda in baking. There is a link to it at the end of this recipe.
STEP 3
During this time, the reaction will begin and the mass will become slightly airy, small bubbles will appear. The more acidic the kefir, the better the reaction.
STEP 4
Sift the flour through a sieve or using a special mug. Begin to gradually introduce flour into the kefir mass, while constantly stirring with a spoon so that no extra lumps form.
STEP 5
Pour a little - mix and so on. It may take a little less or more flour depending on its properties. Read more about this in the article at the end of the recipe. Be aware that the finished dough should not be very tight. It should turn out soft and pliable.
STEP 6
Place the finished dough on the table or in a large shallow plate sprinkled with flour and knead lightly with your hands.
STEP 7
Cover the dough with cling film or a plastic bag and leave to rest. And at this time we will make the filling.
STEP 8
Rinse the greens in running water, dry and finely chop. If VVS has green onions, be sure to add them too, it will be much tastier! In a separate container, mix cottage cheese, herbs, beat in an egg, add a pinch of salt and pepper. It is better to use cottage cheese very dry (if it is wet, then you should get rid of excess liquid. To do this, place the cottage cheese in cheesecloth and squeeze well). STEP 9
Divide the rested dough into approximately equal parts. From the specified amount of products, 6 “balls” are obtained.
STEP 10
Roll out each ball of dough thinly, adding flour if necessary.
STEP 11
Place a thin layer of filling on one half of the dough and distribute it evenly, as in the photo.
STEP 12
Cover with the other side and seal the edges tightly.
STEP 13
Do the same with the rest of the dough and filling.
STEP 14
Heat a dry frying pan on the stove. Fry the flatbreads over moderate heat on both sides until the sides appear golden. How to choose a suitable frying pan, read the article at the end of this recipe.
STEP 15
Stack the finished flatbreads on top of each other and cover with a clean towel so that they do not cool until all 6 pieces are ready.
STEP 16
Melt the butter in a separate pan.
STEP 17
Gently wipe the frying pan in which the flatbreads were fried with dry paper napkins and pour hot water into it. Place the tortillas in water one at a time to wash off the flour.
STEP 18
Immediately place the prepared Chepalgash on a plate and generously grease with butter using a silicone brush.
STEP 19
Stack the flatbreads one on top of the other.
STEP 20
Cut Chechen-style chepalgash flatbreads into pieces and serve with hot tea. Bon appetit!
