    How to make charlotte without gluten? Prepare the necessary ingredients. Suitable flours for this charlotte are rice, oatmeal, almond, coconut, and soy. In some recipes you can find all these types of flour separately or mixed in certain proportions. In our recipe we use only oat flour and starch.

    Combine eggs at room temperature with sugar and beat with a mixer until fluffy. Take large, selected eggs. If the eggs are small, take 4 pieces. The airiness of your pie depends on how you beat the eggs. You can’t beat the mixture until it’s white and thick—the whites will lose the air bubbles that lift the dough. And in this case, even baking powder will not help. The dough will either not rise at all or rise very weakly.

    Sift the oatmeal together with the starch and pour it into the dough in parts. Beat the mixture at low speed each time until smooth. You can add cinnamon directly to the dough or sprinkle it on the apples - choose for yourself. You don't have to add cinnamon at all.

    The finished dough should be just as airy with many small bubbles on the surface. This means that it is cooked correctly and will turn out airy when baked.

    Wash the apples and remove the core. Cut the pulp into medium-thick slices. To prevent the apples from darkening, as I cut them, I immediately transfer them to a bowl of cold water, acidified with 2 tbsp. l. lemon juice. This way, even the sweetest varieties do not darken.

    Line a baking dish (⍉ 20 cm) with parchment and grease the bottom with butter. Place the chopped apples in the pan.

    Spread the dough on top. Bake the charlotte in an oven preheated to 180°C for 35-40 minutes. The top should be browned. Focus on your oven. Check doneness with a skewer - it should come out dry.

    Remove the finished charlotte from the mold and cool slightly. If desired, you can sprinkle the cake with powdered sugar. Then cut into pieces and serve. Bon appetit!

I baked gluten-free charlotte out of curiosity; I wanted to try a new flavor of pie. In fact, it turned out that this charlotte is not much different from the classic one, only more tender). I was pleased with this, I thought it would taste like oatmeal). I kneaded the dough like a regular charlotte. Beat the eggs well until small bubbles appear. In addition to oatmeal, I added a spoonful of rice flour. I took hard autumn apples and peeled them off. I baked the charlotte in a mold with a diameter of 20 cm. I covered the bottom with parchment, laid out apple slices and filled it with dough. I baked it for 35 minutes at 180°C and 10 minutes at 150°C, because the top began to brown heavily, but the middle was still damp. When serving, turn the charlotte upside down with the apples facing up. The cut even created another layer of apples in the middle. Very juicy, tasty and aromatic! The cake is soft, sweet, porous, springy. I recommend you try it!
