Cake with sprouted buckwheat without flour and sugar

Step-by-step preparation
STEP 1
Let's prepare and measure all the products. Some ingredients need to be prepared in advance. Dried pears and raisins must be washed thoroughly and covered with clean water for 2 hours. Also, green buckwheat needs to be washed and filled with water so that the water covers the kernels for several hours. You can also leave dried pears, raisins and buckwheat soaked overnight. Pumpkin seeds just need to be washed several times before cooking.
STEP 2
For the bottom crust, we will take a soaked pear, raisins, pumpkin seeds and grind them in a meat grinder. You can do it twice.
STEP 3
Then add carob to this mixture. Knead this dough well so that it is dense. We won't sweeten it, because... raisins, pear and carob are so sweet.
STEP 4
Now take a springform cake pan and put parchment down to make it easier to move the cake out of the pan later.
STEP 5
Distribute the resulting mass evenly over the bottom of the mold. Level with a spoon.
STEP 6
To decorate, place cashew halves around the edge. And we put our mold in the freezer so that the lower part of the future cake hardens.
STEP 7
Meanwhile, let's work on the top of the cake. First, take 300 ml of water and dissolve 1 tbsp there. agar-agar. Place this mixture over low heat and, stirring occasionally, bring to a boil. Then we leave it to cool, but make sure that it does not freeze.
STEP 8
While the agar is on the stove, rinse the blueberries, rinse the soaked buckwheat and salt the liquid. Let's put it all in a blender, add stevia powder and mix all these ingredients. Don't forget to leave a handful of blueberries to decorate the cake.
STEP 9
We wash the avocado, extract the pulp and also add it to the already mixed ingredients and turn on the blender again.
STEP 10
This is the kind of homogeneous mass we should get.
STEP 11
When the agar has cooled, but is still in a liquid state, add it to our berry mixture and quickly mix. If it starts to form lumps, then put the mixture back into the blender and mix again.
STEP 12
Then we take our mold out of the freezer and pour our top layer into it. From the cold form it will already begin to harden, so we need to have time to decorate our cake.
STEP 13
Take washed raspberries, blueberries, cashews, coconut flakes and decorate the cake with them.
STEP 14
Then we grate the chocolate and complete our decoration. Place the cake pan in the freezer for 30 minutes.
STEP 15
After half an hour, we take out the cake, check whether it is frozen and remove the side of the mold. Carefully transfer the cake to another plate or dish. Our cake without baking, without sugar and flour is ready!
