STEP 1

How to bake brownies with liquid chocolate inside? Prepare the necessary ingredients. For brownies, it is best to take black bitter chocolate 60-70%, but if you don’t really like the pronounced bitterness from such chocolate, you can take chocolate with a slightly lower cocoa content. I used 56% chocolate. Turn on the oven at 200 degrees.
STEP 2

In a separate container, mix finely chopped chocolate and butter. Melt the chocolate and butter in the microwave or in a water bath.
STEP 3

Be careful not to overheat the chocolate, otherwise it may turn into a crumbly mass. If you heat it in the microwave, warm the chocolate for 15 seconds each time, removing the container and stirring the mass. If you heat in a water bath, make sure that the container with chocolate does not come into contact with boiling water. Set the chocolate mixture aside for 5 minutes to cool slightly.
STEP 4

In another container, combine eggs and sugar. You can use a little less or a little more sugar depending on how dark the chocolate you use.
STEP 5

Beat the eggs with a mixer for 4-5 minutes until fluffy.
STEP 6

Pour the cooled chocolate mixture into the egg mixture.
STEP 7

Using a whisk, thoroughly stir everything until a homogeneous chocolate mass is obtained.
STEP 8

Combine flour with salt and sift to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking.
STEP 9

Using a whisk, mix the dough thoroughly but quickly until smooth. Do not knead the dough for a long time, as gluten will begin to separate from the flour and the cakes will turn out dense.
STEP 10

Pour the batter into muffin tins or small portioned ceramic ramekins. Before baking, it is better to grease the molds with oil, even good quality silicone ones are better to be greased. I decided to skip this step because I was confident in the quality of the molds, but the cakes come out with a very delicate crust that easily sticks to the surface of the mold and it is very difficult to get such cakes unharmed (they were a little damaged for me)!
STEP 11

Bake the brownies in an oven preheated to 200 C for 8 to 10 minutes. The time may vary significantly depending on the size of your ramekins and simply the features of your oven. You can learn about the operating features of ovens by reading a separate article, link at the end of the recipe.
STEP 12

Remove the finished brownies from the oven, the center will fall a little (the liquid filling is hidden in the center under a thin crust) and serve immediately with a scoop of vanilla ice cream or whipped cream.
