Broccoli, bell pepper and carrot galettes with zucchini

Juicy vegetable biscuits are an excellent alternative to meat dishes. Do not associate vegetable biscuits with dry rations, which usually include biscuits. Do not think that it will be dry, and therefore not entirely edible food. Vegetable galettes are truly an ideal alternative to meat dishes. First of all, no less tasty. Secondly, super healthy and low in calories. Well, one cannot help but say that everything is prepared quickly and simply, using everything that is at hand. We prepare juicy vegetable biscuits either as a side dish for the main dish, which will come with liquid gravy, or as an independent dish (can be served with rice), for example. Serve with different sauces and different products.

  1. STEP 1

    STEP 1

Let's prepare the vegetables. Wash the zucchini and cut it into small pieces.

  2. STEP 2

    STEP 2

Peel, rinse and cut the carrots into manageable pieces.

  3. STEP 3

    STEP 3

We will also clean the washed bell pepper from seeds, stems, internal partitions and separate the required amount. You can also cut it into small pieces.

  4. STEP 4

    STEP 4

Broccoli, washed in water, drained and divided into umbrellas. That is, a format convenient for grinding.

  5. STEP 5

    STEP 5

Let's open the jar of corn and separate out the required amount of this yellow yummy. Just don’t forget to strain the liquid in which the former queen of the fields was located.

  6. STEP 6

    STEP 6

Next, put the corn, onion and garlic, peeled and chopped for chopping, into the blender bowl (you don’t have to cut the garlic).

  7. STEP 7

    STEP 7

Now you can start preparing the minced meat for the vegetable biscuits. I milled all the cuts. For these purposes I took a blender.

  8. STEP 8

    STEP 8

After grinding everything, add eggs and starch to the mixture. Let's combine everything, and now you can put everything back into the blender if you want. Salt and add spices to taste.

  9. STEP 9

    STEP 9

By the way, if a lot of liquid has formed, squeeze it out in a convenient way, because otherwise you will end up with pancakes, not biscuits. Up to gauze or sieve.

  10. STEP 10

    STEP 10

I chopped the greens finely and mixed them with the minced meat. Now it is important to form the biscuits. Not too thick, not too thin – that’s our task. I made these blanks using molds.

  11. STEP 11

    STEP 11

Carefully roll out the breaded biscuits and fry in boiling vegetable oil. But not for long, 3-4-5 minutes on each side - it depends on the thickness. Turn them over very gently so they don't fall apart. Serve with sauce and hot.
