Products for making banana pancakes should be at room temperature, so remove chicken eggs and kefir from the refrigerator in advance. Beat a chicken egg into a bowl with bananas, add a pinch of salt. Beat the mixture with a fork or mixer until a small foam appears.

    Pour kefir into another bowl - it should be slightly warmer than room temperature. If you did not have time to remove the kefir in advance, then heat it in a water bath. Add the banana puree to this bowl and stir the mixture well to separate and combine the ingredients.

    Sift the wheat flour to saturate it with oxygen - this will make the pancakes more fluffy. Start pouring it into the bowl with the liquid mixture. Add flour in parts, kneading the mixture well each time. Add baking powder at the same time as flour. Mix the dough with a whisk.

    The consistency of the dough should be like thick sour cream. You may need a little more or less flour than the amount indicated in the ingredients, since everyone produces different flour densities. If you want the pancakes to be very fluffy, then the dough needs to be made thicker. Leave the dough to stand at room temperature for a while.

    Meanwhile, heat vegetable oil in a frying pan over medium heat. Spoon the dough into the pan, forming round pancakes.

We were left with two overripe bananas; no one wanted to eat them anymore. And in the cookbook I had just a recipe for banana pancakes. I doubled the quantity of ingredients and got a whole mountain of pancakes. I beat the bananas with sugar and eggs with an immersion blender, and then added the rest of the ingredients according to the list. I made the dough thicker, like sour cream. First I fried it over high heat, and when the crust set, I lowered the heat. The pancakes are very reminiscent of yeast pancakes, just as heavy, porous, soft, and even similar in appearance. I like these. The pancakes grow right in the frying pan and become fluffy and airy. Thanks to sweet bananas, you don’t need to add a lot of sugar to the dough; the pancakes turn out quite sweet.
