STEP 1
How to make an awesome Ice Cream cake? Prepare the products according to the list. Take only high-quality butter and sour cream from a trusted manufacturer, without milk fat substitutes. We take out the butter in advance so that it becomes soft.
STEP 2
Let's prepare the cakes. Break the egg into a deep bowl and add sugar. Beat with a mixer or whisk.
STEP 3
Add sour cream, soda, slaked with vinegar and softened butter. Beat again.
STEP 4
Sift the wheat flour through a fine sieve into a deep bowl in which you will knead the dough. This will saturate it with oxygen. Add flour gradually, in small portions, focusing on the desired consistency of the dough. Keep in mind that you may need a little more or less flour. Add the sifted flour and knead the dough with a spoon or fork.
STEP 5
The finished dough is soft, not liquid, but not too thick, similar to thick sour cream.
STEP 6
Line a rectangular baking dish (approximately 20x30 cm) with parchment paper. Spoon out the dough and smooth it out. Preheat the oven to 180°C, top-bottom mode. Bake the cake at 180 degrees until golden brown for 30-35 minutes. Time and temperature are approximate, rely on your oven and the readiness of the cakes.
STEP 7
Cool the crust to room temperature.
STEP 8
Cut the cooled cake into small pieces or break it with your hands. You can make the pieces even smaller than in the photo, I just had the cake rise high, so the cubes turned out to be plump. We cut off the dried edges of the cake and grind it into crumbs in a separate container.
STEP 9

We dilute the starch with part of the milk, pour the rest of the milk into a saucepan, add sugar, and bring to a boil.
STEP 11
Pour the starch diluted in milk into the pan in a thin stream. Stirring the mixture constantly, cook until thickened. We get milk jelly.
STEP 12
Cool the finished jelly a little, add vanilla sugar, mix well. Cool the jelly completely.
STEP 13
Beat the butter a little with a mixer, whisk or fork in a separate deep container. Continuing to beat, gradually add chilled milk jelly to it. This is how we get custard.
STEP 14
We cover a round deep container with cling film so that its edges hang outside the container. Pour 1/3 of the crumbs into the bottom of the container.
STEP 15
Pour the pieces of cake into the bowl with the prepared cream and mix thoroughly. Place the mixture in the mold with the crumbs and compact well so that there are no voids left. Cover the mixture with the edges of cling film and place the mold in the refrigerator for 3-4 hours. Later, turn the contents of the container onto a flat dish and carefully remove the film.
STEP 16
Sprinkle the remaining crumbs onto the sides and top of the cake. Decorate the top of the cake with a mesh of chocolate melted in a water bath or in any other way as desired. You can also sprinkle with coconut flakes.
