STEP 1

How to prepare assorted zucchini, tomatoes and cucumbers for the winter? Prepare the necessary ingredients. You can supplement the composition of the products with garlic, onions, white, red or cauliflower, any spices and herbs that you like best. Wash and dry all vegetables. Cut off the ends of the cucumbers, pierce the tomatoes with a toothpick from the side of the stalk. Thanks to this, the skin on the tomatoes will not burst in the preparation.
STEP 2

You can take zucchini both young and ripe; in any case, it is convenient to cut them into long pieces, so they fit into jars more compactly, especially if you like to use small jars, like me. However, this depends on the number of family members who can eat the preparation in one or two servings, because it is no longer worth storing marinades and pickles.
STEP 3

So, sterilize the jars and lids in advance so that they are ready by the time you add the vegetables. Place garlic cloves, a pinch of peppercorns at the bottom of the prepared jars and gradually fill with vegetables.
STEP 4

Place zucchini sticks and dill sprigs as tightly as possible between the tomatoes and cucumbers.
STEP 5

Be sure to put dill on top, it will prevent the vegetables from floating.
STEP 6

Fill the filled jars with boiling water, cover with sterile lids and leave for 5 minutes. Then pour the water into the pan. The most convenient way to do this is to use a special lid with holes.
STEP 7

Add salt, sugar and citric acid to the water and boil for 5 minutes, stirring.
STEP 8

Pour the prepared marinade over the assortment and wrap tightly with screw caps or roll up using a key. Turn the jars upside down and place them “under the fur coat” until they cool completely.
STEP 9

Store ready-made jars with assorted zucchini, tomatoes and cucumbers in a cool place for the winter. You can also store the workpiece in normal room conditions. Bon appetit!
