    STEP 1

How to make Armenian tolma? First, prepare the ingredients for the filling. The meat is required without bones, only pulp. Instead of meat, you can use store-bought minced meat in the same proportions, but it is advisable that it contains a minimum amount of fat.

  2. STEP 2

    STEP 2

Rinse the rice thoroughly until the water is clear and dry.

  3. STEP 3

    STEP 3

Peel the onion and garlic. Cut the onion into pieces.

  4. STEP 4

    STEP 4

Wash the beef, dry it and cut into medium pieces.

  5. STEP 5

    STEP 5

Also wash the pork meat and cut into pieces.

  6. STEP 6

    STEP 6

Pass both types of meat, onion, garlic, dill and parsley through a meat grinder.

  7. STEP 7

    STEP 7

Add washed rice, dried basil, tarragon and mint to the minced meat.

  8. STEP 8

    STEP 8

Knead the minced meat thoroughly. Add salt and paprika and stir again.

  9. STEP 9

    STEP 9

Wrap the bowl of minced meat in a bag and place it in the refrigerator overnight.

  10. STEP 10

    STEP 10

Remove the grape leaves from the jar and rinse with hot water.

  11. STEP 11

    STEP 11

Place the sheet with the glossy side down and straighten it out. Place some minced meat on the wide part of the sheet.

  12. STEP 12

    STEP 12

Roll the sheet into a roll, tucking in the side edges.

  13. STEP 13

    STEP 13

Roll all the other rolls in the same way.

  14. STEP 14

    STEP 14

Place the rolls in a cast iron pan or cauldron.

  15. STEP 15

    STEP 15

Place several whole grape leaves on top. Place a plate on them. Pour in enough water to cover the plate.

  16. STEP 16

    STEP 16

Cover the pan with a lid and place on low heat. Simmer for about 1 hour or longer until done.

  17. STEP 17

    STEP 17

Now prepare the necessary ingredients for the sauce.

  18. STEP 18

    STEP 18

Wash the cucumber and grate it on a coarse grater. The skin, if it is not rough, damaged or bitter, does not need to be cut off.

  19. STEP 19

    STEP 19

Wash the dill, dry and finely chop.

  20. STEP 20

    STEP 20

Beat the sour cream with a fork. Add grated cucumber, dill, garlic, coriander and salt to the sour cream. Mix everything and refrigerate for 30 minutes.

  21. STEP 21

    STEP 21

Serve tolma with sour cream sauce. Bon appetit!

The very idea that a dish could be prepared from grape leaves was unusual. There were no canned leaves, I picked fresh ones (choosing young and soft ones). Not all of the ingredients included herbs, so I used Italian herbs as a seasoning. I added a little carrots. It turned out tasty and satisfying. The structure is somewhat reminiscent of cabbage rolls. The finished grape leaves taste like sorrel. Surprisingly, the family liked it so much that they ate it all almost immediately. I poured it with white pizza sauce (https://bestrecipes24.com/cooking/13371-belyi-sous-dlya-piccy) And the dolma goes very tasty with pickled cabbage pieces (https://1000.menu/cooking/33975-kapusta- marinovannaya-kusochkami-bystrogo-prigotovleniya) Many thanks to the AUTHOR for the recipe
