STEP 1

How to make apple pie with sour cream filling? Prepare the ingredients according to the list. Start by preparing shortbread dough with sour cream. How to make the dough? Place softened butter (you can replace it with margarine, it will be cheaper, and the taste and quality of the pie will not deteriorate from such a replacement, but this product is less healthy than butter) in a deep bowl.
STEP 2

Add sour cream (I have 20% fat, you can use a less fatty product), sugar, and a pinch of salt to balance the taste. Using a whisk or mixer, mix the ingredients until the mixture is homogeneous in consistency.
STEP 3

Add baking powder, stir. Baking powder can be replaced with soda slaked with vinegar or lemon juice (half a teaspoon of soda, half a teaspoon of vinegar or juice).
STEP 4

Add sifted wheat flour. Knead soft and manageable shortbread dough. There is no need to knead the shortbread dough for a long time so that the products made from it do not turn out hard. The main task is to collect the dough into one lump. Wrap the shortcrust pastry ball in cling film and put it in the refrigerator to rest for half an hour. Meanwhile, make the filling.
STEP 5

How to make the filling? You can use any apples according to your taste and availability, but it is better to use sweet and sour varieties and slightly hard ones so that they do not turn into puree in the pie. Wash the apples, peel them, remove the core and seeds. Cut the apples into slices. To prevent the apples from darkening, you can sprinkle them with lemon juice, but this is not necessary if you prepare the apples immediately before baking the pie.
STEP 6

Prepare sour cream filling. Place sour cream in a bowl, beat in a chicken egg, add sugar and a tablespoon of wheat flour. Mix the ingredients with a mixer until the mixture is homogeneous in consistency.
STEP 7

Remove the dough from the refrigerator. Grease the pie pan with butter. Any heat-resistant pan will work for this recipe. If you are using a silicone mold, you do not need to coat it. But it is better to lightly grease metal, ceramic or glass dishes with vegetable oil so that the baked goods do not burn. Roll out the dough into a thin layer according to the size of the mold (I have a mold with a diameter of 22 cm), making low sides from the edges of the dough. Place the dough into the mold.
STEP 8

Place apple slices on top and sprinkle with ground cinnamon to taste.
STEP 9

Fill the apples with sour cream filling. Preheat the oven to 180 degrees. To ensure that the oven has time to heat up to the desired temperature, turn it on in advance (10-20 minutes before the start of cooking). Bake the pie for about 40 minutes until the top is golden brown.
STEP 10

Remove the pie from the oven, let cool slightly and serve. The cake turns out very soft, tender and slightly moist in taste, despite the fact that the base is sandy. Enjoy your tea!
