STEP 1
How to make apple quiche? First prepare the dough. Prepare food for him. Cool the oil well before cooking. You don't need to freeze it, just remove it from the refrigerator just before adding it to the flour.

Take a large bowl. Sift flour into it. This will get rid of lumps and make the baked goods more fluffy and soft. Add salt and baking powder. Stir. Please note that you may need more or less flour than I did. Focus on the consistency of the dough.

Remove the butter from the refrigerator and cut it into cubes. Add the butter to the flour and rub the mixture with your hands until it becomes sandy crumbs.
STEP 4
Add egg, sugar and sour cream.
STEP 5
Stir the dough first with a fork and then with your hands. It forms into a ball pretty quickly. Place the bowl of dough in the refrigerator while you prepare the filling.

The next step is to prepare the cream. Prepare food for him. I used corn starch, but you can also use potato starch. Put less of it, one tablespoon.

Take a saucepan with a thick bottom. Break an egg into it, add sugar and starch. Mix with a whisk.
STEP 8
Pour in cold milk, stir until smooth.
STEP 9
Boil the cream over low heat for a few minutes until thickened. Be sure to stir the mixture so that it does not burn.
STEP 10
All that remains is to prepare the filling - apples. Sour varieties of apples will taste better, but in general this is not important.
STEP 11
Wash the apples well under running water. Cut them into quarters, remove the seeds, cut off the skin. Cut the apples into small slices.
STEP 12
Take a baking dish. This recipe is designed for a mold with a diameter of 20 cm. I have a springform pan and lined the bottom with baking paper. There is no need to grease the pan - there is a lot of oil in the dough, it will not stick. Remove the dough from the refrigerator, divide it into two parts - 2/3 and 1/3. Spread most of it with your hands along the bottom and sides of the pan. It is convenient to do this by cutting pieces of the same thickness and laying them out in a mold. Prick the dough with a fork to prevent it from puffing up during baking.
STEP 13
Place apples on the dough.

Spread hot cream on top. It is not necessary to cool it for this recipe.
STEP 15
Roll out the remaining third of the dough into a rectangle using a rolling pin. To prevent it from sticking, add a little flour.
STEP 16
Cut the dough into equal strips.
STEP 17
Place strips in a grid pattern on top of the cream. Fold the sides, covering the edges of the mesh. Pinch them with a fork.
STEP 18
Bake the pie in the oven at 180°C, top-bottom mode, about 40-45 minutes. Determine the exact baking time and temperature based on your oven. The top and edges of the pie should turn golden. Cool the finished pie slightly and then remove from the mold.
STEP 19
Pie with apples and custard is ready. Slice it when completely cooled to stabilize the cream.
