Delicate apple pie for a family tea party! I know so many recipes for apple pies, but this one is my favorite because it is very easy to prepare. The peculiarity of the pie is a large number of apples and a small amount of dough. Very tasty, tender and aromatic apple pie!

    How to bake an apple pie with kefir? Prepare all the necessary products. For such baking, it is important that all ingredients are at the same temperature, so remove the eggs from the refrigerator in advance. Take wheat flour, preferably not the highest, but the first grade. Or unbleached premium grade with high gluten content. Large eggs, preferably homemade, or in extreme cases, soda. Kefir is best richer - this will make the pie tastier.

    Beat kefir with eggs and vegetable oil until smooth. It is not necessary to use a mixer; you can use a regular whisk.

    Add sugar and vanilla sugar. Whisk again.

    Add cinnamon. Cinnamon is the perfect spice for apple pie, but cinnamon isn't the only spice that works here. Therefore, if you are a fan of spicy baking, you can add ground cloves, ginger, nutmeg, and cardamom here. Focus on your taste.

    Sift flour into the dough along with baking powder and salt. I advise you not to neglect this process, because... Thanks to sifting, the finished baked goods turn out very airy and light, so be sure to use a sieve. I also recommend not adding all the flour specified in the recipe at once. Add it in parts to achieve the desired consistency. You may need less or more of it than prescribed.

    Mix the dough well, just stir it with a fork. As you can see, the dough is quite liquid. It should resemble pancake dough or thin sour cream. If you haven't added all the flour, add a little more flour at this stage if necessary.

    Cut the apples into slices. Sour and dense varieties of apples, for example Antonovka, Bogatyr, are best suited for apple pies. These apples hold their shape well when baked and give the pie a slight sourness. Cut the apples into thin slices. Peeling the apples is not at all necessary, but the seed pod must, of course, be removed. The ingredients indicate the weight of already cut apples without seeds. For thin slicing, use a sharp knife.

    Add chopped apples to the dough.

    Mix the dough with the apples well and let stand for 10 minutes so that each apple slice is soaked in the dough.

    Lightly grease an ovenproof pie dish with oil. Pour the dough with the apples. The mold size is suitable for both 22-24 cm and 18-20 cm. But keep in mind that the higher the pie, the longer the dough will bake - closer to the end of the baking time, check the middle of the pie with a toothpick (since it takes the longest to bake) and if necessary, adjust the time (if the dough sticks to the toothpick, then you need to keep the cake in the oven a little longer)

    Bake the pie in an oven preheated to 180-190 degrees for approximately 35-40 minutes. Time and temperature are approximate, use your oven as a guide. It is better to cool the pie before serving. Bon appetit!

This is not the first time I have prepared this recipe, as our family loved the pie for its simplicity and speed of preparation. On my own behalf, I can attribute one more advantage to it: easy compatibility with different fillings. Moreover, if you want variety, you can bake two different pies from one batch of dough. Today I did just that: I made a pie with frozen blueberries and pear, but left about a third of the batter and added frozen cherries to it. The berries, of course, were first defrosted in the microwave and placed on a sieve to drain excess liquid. I also added a little psyllium to each of the fillings (about a level teaspoon). Both the pie turned out very tasty. I recommend!
