STEP 1
How to make upside-down apple pie with caramel using yeast dough? To begin, prepare the necessary ingredients according to the list. It’s better to start cooking with the dough. Take premium flour. Any vegetable oil will do. I have sunflower.
STEP 2
Sift the flour into a bowl. Add dry yeast and stir. This recipe requires yeast, which immediately combines with the flour. They do not need to be pre-activated in warm liquid. Therefore, when choosing yeast, carefully read the instructions.
STEP 3
In another bowl, combine the egg, sugar, vanilla sugar and salt. Whisk everything until smooth.
STEP 4
Heat the milk. It should be warm. Pour the warm milk into the egg mixture and stir.
STEP 5
Pour the resulting milk-egg mixture into flour with yeast, pour in vegetable oil.
STEP 6
Knead into a homogeneous soft elastic dough. Add a little more flour if necessary. But do not fill the entire dough with flour, it may remain slightly sticky. Add orange zest and knead the dough again.
STEP 7
Place the dough in a bowl, cover with a towel and leave in a warm place for 1 hour to rise.
STEP 8
While the dough is rising, prepare the filling and caramel. You can use any apples, but sweet and sour apples (Granny Smith, Simerinka varieties) with elastic, dense pulp are better. Apples with loose pulp can quickly become boiled in puree, but we need to keep the pieces intact.
STEP 9
Wash the apples, peel and seeds, cut into small slices. If the apples darken quickly, sprinkle them with lemon juice.
STEP 10
Now prepare the caramel. Pour sugar into the pan, pour in orange juice. Place on low heat. Stirring, cook the caramel until the characteristic golden color appears.
STEP 11
Add the butter and cook, stirring, until the butter has melted. The caramel should be slightly brownish in color. But it’s important not to burn it completely. Therefore, do not leave the stove and watch all the time.
STEP 12
Add the chopped apples to the pan and stir until they are completely coated with caramel. Simmer over low heat for about 5 minutes. The apples should retain their shape.
STEP 13
While the apples are stewing, roll out the risen dough into a circle along the diameter of the mold.
STEP 14
Place caramelized apples in a baking dish and smooth out. The diameter of my mold is 20 cm, but more is possible. The main thing is that the apples cover the entire bottom of the selected shape.
STEP 15
Place the rolled out yeast dough on top of the apple filling. Make small cuts on top of the dough with a knife so that it does not swell during baking. Place the pie in an oven preheated to 180°C for 40-45 minutes. To protect the oven, place a piece of parchment or foil under the pan.
STEP 16
Invert the hot pie onto a plate so that the apple filling is on top. Cool slightly and serve. Bon appetit!
