STEP 1
Let's prepare the ingredients. It is better to take apples for pancakes that are juicy and sweet. Kefir and eggs must be removed from the refrigerator in advance; they should be at room temperature.

Wash the apples, peel and core. If the apples are fresh with delicate skin, you can leave it, it will only add vitamins and nutrients to the dish. Grate the apples on a medium grater. You can finely chop the apples with a knife, then they will be felt in the dough and have a pleasant crunch, and besides, not a drop of juice will be lost, unlike grating.

Place the grated apples in a bowl. Add sugar and a pinch of salt to taste.

Beat in one chicken egg.

Stir the mixture until the egg disperses and the sugar and salt dissolve.

Add kefir and mix.

Pour flour and half a teaspoon of soda into a bowl with apples. Mix. The consistency of the dough should be like thick sour cream.

If you want the pancakes to be very thick and fluffy, then you need to add flour to the dough. The dough should start to bubble, leave it on the table for twenty minutes. It will thicken slightly.
STEP 9
Heat vegetable oil in a frying pan. Place a tablespoon of dough onto the frying pan to form small round pancakes. It is better to fry these pancakes in a frying pan with a thick bottom and a lid. So that during frying, you can cover the frying pan with a lid, then the pancakes will rise well and bake inside. You need to fry the pancakes over medium heat. Fry the pancakes until golden brown on one side.
STEP 10
Then turn over and fry for about 3 minutes from the second, also so that the pancakes brown. Remove the pancakes from the pan onto a paper towel to allow excess oil to escape. Place pancakes with apples on a plate and serve with sour cream, jam, condensed milk, or just with tea or coffee. Bon appetit!
